Sourdough Discard Banana Bread

I started baking this Sourdough Discard Banana Bread to avoid wasting my starter, but now it’s a regular in my kitchen. The sourdough gives it a soft texture and a balanced flavor that’s not too sweet. It’s one of those recipes that feels comforting every time.

Why This Recipe Works

I love this Sourdough Discard Banana Bread because it’s the perfect mix of comfort and practicality. It uses up extra sourdough starter and ripe bananas, but the result tastes like something you’d bake just for the joy of it. Here’s what makes it special:

  • Soft and Moist Crumb: The sourdough discard keeps the bread tender and moist for days. It has that same bakery-style texture you’ll find in my Mom’s Best Zucchini Bread Recipe.
  • Balanced Sweetness: The ripe bananas bring natural sweetness, while the sourdough adds a gentle tang that keeps it from being too sugary. It’s perfectly balanced and flavorful in every bite.
  • Simple to Make: This recipe comes together with basic ingredients and no complicated steps. It’s a great bake for any day of the week, whether you’re new to sourdough or a seasoned baker.
  • Nutty Goodness: Toasted walnuts add a warm crunch that pairs beautifully with the soft banana base. You can even swap them for pecans if you love that flavor, like in my Banana Pecan Bread.
  • Great for Sharing: This loaf slices cleanly and stays fresh, making it perfect for gifting or bringing to brunch. It’s one of those recipes that always gets asked for again.

Ingredients

  • Very Ripe Bananas – Provide natural sweetness, moisture, and that classic banana flavor. The riper the bananas, the better the taste and texture.
  • Unsalted Butter – Adds richness and a soft crumb. Room-temperature butter creams easily with sugar for a smooth, even batter. You can use salted butter and slightly reduce the added salt if needed.
  • Granulated Sugar – Sweetens the bread and balances the tang from the sourdough discard. You can replace part of it with brown sugar for a deeper flavor.
  • Sourdough Discard – Adds a subtle tang and keeps the bread moist. Use room-temperature discard for best results. It’s a great way to use up extra starter.
  • All-Purpose Flour – Provides structure and a tender crumb. You can substitute half with whole wheat flour for a heartier loaf.
  • Baking Soda and Baking Powder – Work together to help the bread rise and stay light and fluffy.
  • Walnuts – Bring a toasty crunch and nutty flavor. Lightly toasting them before mixing in makes a big difference.
  • Raisins (optional) – Add a bit of chewiness and natural sweetness. You can skip them or replace them with dried cranberries.
  • Chocolate Chips (optional) – For a dessert-style banana bread, fold in chocolate chips. They melt into the crumb and make each slice extra indulgent.

Instructions

  1. Preheat Oven: Preheat your oven to 350°F. Grease a 9.25 x 5.25-inch loaf pan and set aside.
  2. Toast Walnuts: Lightly toast walnuts in a dry skillet over medium heat until fragrant. Let them cool, then chop into small pieces.
  3. Cream Butter and Sugar: In a large mixing bowl, use a hand or stand mixer to cream room-temperature butter with sugar until light and fluffy.
  4. Add Bananas and Eggs: Mash the ripe bananas and add them to the butter mixture along with the eggs. Mix until smooth and fully combined.
  5. Mix in Sourdough and Vanilla: Add vanilla extract and room-temperature sourdough discard. Mix gently using a sourdough whisk or spatula until well incorporated.
  6. Combine Dry Ingredients: In a separate bowl, whisk together flour, baking soda, baking powder, and salt.
  7. Mix Batter: Add the dry ingredients to the wet mixture and stir with a spatula just until combined. Do not overmix to keep the bread tender.
  8. Add Mix-Ins: Fold in the toasted walnuts. If desired, add raisins or chocolate chips for extra flavor.

Substitutions and Variations

Here are some of my favorite substitutions and variations:

  • Nut Options: I usually use walnuts, but pecans or almonds work just as well. You can also leave the nuts out if you prefer a smoother loaf.
  • Sweet Add-Ins: Try adding chocolate chips for a richer flavor or raisins for a bit of chewiness. Dried cranberries or chopped dates are great options too.
  • Flour Swaps: I like using all-purpose flour, but you can replace half with whole wheat flour for a heartier texture. Spelt flour also adds a nice nutty flavor.

Frequently Asked Questions

Why is my banana bread dense?

Overmixing the batter can make the loaf dense. Mix just until the dry ingredients are combined, and make sure your baking soda and baking powder are fresh.

Can I use active sourdough starter instead of discard?

Yes, you can use active starter if that’s what you have on hand. The flavor will be slightly less tangy, but the texture will still be soft and moist. Just make sure it’s at room temperature before mixing it in.

Can I add other mix-ins?

Absolutely. Try adding shredded coconut, dried cranberries, or even a swirl of peanut butter for a fun variation. Just keep the total add-ins to about 1½ cups so the batter bakes evenly.

How long does it keep?

Store the banana bread in an airtight container at room temperature for up to 3 days or in the fridge for up to 5 days. You can also freeze it for up to 3 months. To reheat, warm slices in the microwave for a few seconds or toast lightly before serving.

Instructions

  • Preheat the oven to 350°F and grease a 9.25 × 5.25-inch loaf pan.
  • Lightly toast the walnuts in a skillet, then chop and allow them to cool completely.
  • Using a hand mixer or stand mixer, cream the butter and sugar together until pale and creamy.
  • Add the mashed bananas and eggs, mixing until smooth.
  • Mix in the vanilla extract and room-temperature sourdough discard until fully incorporated.
  • In a separate bowl, combine the flour, baking soda, baking powder, and salt.
  • Add the dry ingredients to the batter and mix just until combined using a spatula.
  • Fold in the toasted walnuts, along with the raisins and chocolate chips if using.

Notes

  • Use very ripe bananas. The darker the peel, the sweeter and more flavorful your bread will be.
  • Bring all ingredients to room temperature before mixing. This helps the batter blend smoothly and bake evenly.
  • Don’t overmix the batter. Stir just until the dry ingredients are incorporated to keep the loaf tender.
  • Toast the walnuts. A quick toast in a skillet deepens their flavor and adds a pleasant crunch.
  • Use room-temperature sourdough discard. Cold discard can cause the butter to seize and affect the texture.
  • Check for doneness early. Start testing around 55 minutes; the loaf is ready when a toothpick comes out clean or with a few moist crumbs.
  • Let the loaf cool in the pan for 10 minutes before transferring to a rack. This helps it set and prevents breaking.
  • Keep mix-ins balanced. Limit total add-ins like nuts, raisins, or chocolate chips to about 1½ cups so the bread bakes evenly.
  • Store properly. Wrap the cooled loaf tightly and keep it at room temperature for up to 3 days or freeze for longer storage.
  • Warm before serving. A quick reheat in the toaster or microwave brings back that fresh-baked softness.
