This Easy Cucumber and Tomato Salad is surprisingly simple for the extraordinary benefit it provides and complements a meal. It's naturally very delicious and has no extra seasoning, apart from pepper and salt, or dressing.
Although it goes well with many dishes it is perfect for backyard barbecues. With flavor-loaded steak or chicken, it adds a crisp and refreshing balance to a meal, especially with homegrown vegetables. Eat homegrown as much as you can.
If you don't do or can't do a garden, pick some up at a farmers market. Store-bought, cucumbers especially, can’t compare to those picked fresh from the garden. You will usually see this salad at weddings, big parties, or church feast gatherings. It also makes for a nice quiet lunch on the deck, with a good chunk of homemade French bread. 🙂 Enjoy and stay healthy!

How to Make Cucumber and Tomato Salad
Rinse all the veggies, dill, and pat dry using a paper towel.
Cut the cucumber in half. Then take that half and cut it into three thin, long wedges. Cut each piece in half.
Place whole cherry tomatoes and sliced cucumbers into wedges into a large salad bowl.
Add pressed or finely diced (my preference) garlic, chopped dill, sea salt, and freshly ground pepper.
Cover with plastic food wrap and shake to mix lightly. Let the salad stand and juice for 15 minutes before serving.
Released salad juice serves as a dressing.
I prefer to serve this salad with mashed potatoes and steak, yum!
💠Storing Tip
Store the salad in the bowl covered with a lid for 48 hours. Any longer than that and the cucumbers will lose their crispiness and become limp.
The salad tastes even better the next day in my opinion after soaking up all the flavors.

- 1 lb. – organic cherry tomatoes
- 4 - garlic gloves (I used homegrown garlic)
