    Broccoli Salad with Grapes and Almond Slivers Recipe

    For a long time, I thought that fruit and vegetables as a combination in salads do not match. Lately, I have become convinced that this is more of a conservative folklore. Separate from personal taste. I took a step back and re-examined my own personal take on this idea and ended up changing my mind after trying salads with such combinations. And I have to tell you that I have been missing out because this salad as well as other veggie/fruit combos are delicious.

    Thanks to Olga, a gal who was gracious enough to share this recipe with me, which she made at a recent function. At home some of my family members didn't like the combo at all, but after giving it a few chances (as usual with a newly tried food), it soon becomes one of their favorite. I guess it’s an acquired taste, but a worthwhile one.

    This Broccoli Salad with Grapes and Almond Slivers also goes nicely with many main dish varieties, and dress up common and simple dishes like Mashed Potatoes and Meat Patties. The toasted almonds add good flavor and crunchiness to the salad. It's a great addition to any holiday feast, and any occasion any time of the year. Very scrumptious and good looking on your table. Enjoy.

    Ingredients:

    1.5 lbs. – broccoli
    ½ large - lemon
    1 lb. – small red grapes
    1 cup – almond slivers

    Dressing and Seasoning:

    ½ cup – mayonnaise
    Salt and pepper (to taste)

    Instructions:

    1. Rinse broccoli well. Cut the broccoli florets into bite size pieces. Squeeze lemon juice over the broccoli. Mix it well for 30 seconds or until broccoli absorbs all the lemon juice (leaving no lemon at the bottom). Let the broccoli sit on the counter top for an hour and a half. (TIP: Lemon juice helps remove chemicals/pesticides, improves taste, softens the veggies, removes the bitterness, adds crunchiness, preserves the bright green color and gives delicious lemony aroma.)

    2. Heat the oven to 350 F. Toast almonds for 15 min at 350 F. Take toasted almonds out of the oven and let them cool completely before use.

    3. Rinse and dry grapes a with paper towel. Cut grapes in half.

    4. Combine all the ingredients in a large bowl. (If you are not ready to serve yet, cover with plastic food wrap and refrigerated until ready) Add mayonnaise and mix it in well. Add salt and pepper to taste.

      Mmmmm love broccoli hated it @ young kid it wasn't until I was maybe fifteen or sixteen that I started to really like and grew a major appreciation for it but with grapes wow interesting will hafta try yo those r my favorite kind gurl
