My recipe will take the fear of yeast bread absolutely out of you, thanks to the easy-to-follow step-by-step instructions with pictures!
It’s actually much easier working with yeast dough than even cake batter, in my opinion. It’s like playing with playdough!
What You Need to Make Potato Rolls At Home
All you need are some incredibly simple pantry staple ingredients to make this delicious potato roll recipe at home. Let’s take a look at what these ingredients are:
- All-purpose flour: To start off, you’ll need some regular all-purpose flour to use as the base of these delicious buns.
- Milk: We’ll be activating the yeast in some warm milk and water mixture which will make these rolls extra soft and pillowy in texture.
- Water: As I mentioned above, we’ll also need some warm water that we’ll mix with the milk to activate the yeast.
- Yeast: For the yeast, we’ll be using some active dry yeast which will give us incredible rolls that you won’t be able to forget.
- Sugar: We’ll also need some regular white granulated sugar to feed the yeast and help it activate properly.
- Mashed Potatoes: This is the star ingredient of the recipe! It’ll help your rolls be incredibly soft, with a deliciously subtle flavor as well. Plus, it also helps them stay fresh and soft for way longer than regular dinner rolls.
- Butter: For an even better flavor and texture, we’ll also be using some melted unsalted butter in this recipe.
- Egg: Adding an egg will not only add richness but also flavor to really bring everything together in the recipe.
Olive oil: Once our potatoes are done, we’ll brush them with some extra light olive oil to enhance their flavor even more.
Garlic powder: We’ll also sprinkle some garlic powder on top after they’re done which really makes the flavors pop!

This incredibly easy-to-follow recipe will have you wanting to make it again and again! Here’s how to make these potato rolls at home step-by-step:
How to Make Potato Roll Dough
Start by combining warm water, milk, sugar, and yeast in the bowl of a stand mixer and give it a good stir until the sugar melts. Let it rest in a warm place while you’re preparing the rest of the ingredients.
If you’re kneading by hand, you can mix it all in a large bowl instead.
In the meantime, measure out salt, sift flour, and also melt the butter. Set them aside until ready for use.
Now add the egg, salt, melted butter, and mashed potato into the mixer bowl with the yeast mixture. Whisk it all together with a hand whisk.
Next, add half of the flour into the mixture, and mix using the dough hook attachment on low/med speed.
Add about ½ cup thereafter while the dough is mixing. After the flour is mixed in and the dough is not getting stuck to the spatula or sides of the mixer bowl that’s a good indication that your yeast dough is well mixed.
Finally, cover a mixer bowl with plastic wrap, and puncture a few holes with a knife so the dough can breathe. And then place it in a warm place for an hour to proof.
Alternatively, you can mix in the flour and then knead the dough by hand on a lightly floured surface till you get a soft dough. Once it’s done, place it in a lightly greased bowl and let it proof.
How to Shape the Rolls
After the dough is done proofing, you’ll notice that it has tripled in size. Gently knock the dough down using a silicon spatula or your hand.
Next, grease baking pans with olive oil. Divide dough into 24 to 30 equal sizes. I like to weigh the dough, but this is optional and you can also eye it.
Then, dip your hands in olive oil and take one piece of dough. Fold then roll the dough into a ball and place it onto the greased baking pan.
Repeat the same instructions for the rest of the dough pieces. As I mentioned above, you can make 24 to 30 rolls depending on the size you prefer.
Cover each pan with a cloth and let them proof for about 15 minutes.
How to Bake Potato Rolls
Time to bake our delicious potato rolls! Preheat the oven to 350 F (180 C). Place the pans into the oven and bake for 25 minutes or until golden brown in color.
Remove from the oven, let the rolls cool down a little and then brush them with olive oil using a silicon brush. Next, sprinkle sea salt or garlic powder and finely chopped parsley on top!
Your delicious potato rolls are ready to be served!
Tips for the Tastiest Potato Buns Ever
- You can space these potato rolls far apart on the baking sheet to get crispier and more golden rolls since they won’t touch each other while baking.
- Alternatively, if you like them soft you can space them apart the way I’ve done to get softer and fluffier potato rolls.
- If you’re using a bread machine, you can simply add all the ingredients to it and set the machine on dough cycle. When it’s done, just roll and shape the dough as mentioned in this recipe and you’ll end up with delicious potato rolls after they’re done baking!
- Make sure the dough is placed in a warm place when proofing it so that it rises perfectly.
How to Store Leftover Potato Rolls
If you have any leftovers, you can easily store them in the fridge for up to 4 days!
Alternatively, you can also freeze them in the freezer by letting them come to room temperature first, then freezing them on a baking sheet in the freezer. After that, place them in freezer-safe Ziploc bags and freezer for up to 1 month.
If you’re freezing them, make sure not to brush them with olive oil or any other garnishes (garlic powder, salt, or fresh parsley).
To reheat, let them thaw overnight in the fridge. Then place them on a baking sheet and heat in the oven for 3 to 5 minutes.
Once they cool down slightly, brush them with olive oil using a silicon brush, and then sprinkle salt or garlic powder and chopped parsley on top! Enjoy while they’re warm.

Made these rolls for today's dinner. They turned out really good! I had a hard time stopping myself from eating a few more! Lol! The only thing I would change in this recipe is adding more salt to the dough. ( I like my food salty) But that's just me. Other than that, these rolls are delicious! Thanks for a great recipe Valya!

These were amazing! Thank you for sharing. I actually made these a while back but never got around to posting a comment. Then today decided these would go great with some fresh Borscht. The whole meal came together perfectly. All 30 rolls were gone before bedtime. Still have some mashed potatoes left... Might just make another batch tomorrow. Will definitely be making this recipe this Thanksgiving. I did increase salt to 1 tsp and used salted butter to brush onto rolls when they came out of the oven. Yum!
