Turkey Croissant Sandwich
This Turkey Croissant Sandwich is one of my favorite easy lunches when I want something fresh and satisfying. The buttery croissant, crisp lettuce, and tender turkey make every bite so good. It’s simple, quick, and always hits the spot.

Why This Recipe Works
I love making these Turkey Croissant Sandwiches for quick lunches, picnics, or easy party platters. They’re fresh, simple, and always look like something you’d get from a café. Here’s what makes them special:
- Flaky and Buttery: The croissant gives these sandwiches a soft, buttery texture that makes them stand out from regular bread sandwiches. It’s the same flaky goodness I love in my Simple Classic Croissanwich.
- Fresh and Crisp: The combination of lettuce, tomato, and cucumber adds a refreshing crunch that balances the richness of the croissant and turkey. Every bite feels light but satisfying.
- Quick to Make: These sandwiches come together fast, making them perfect for busy days or last-minute guests. You can prep the veggies ahead and assemble right before serving.
- Perfect for Entertaining: They look beautiful on a platter and hold up well, especially when secured with wooden picks. I often serve them with other bite-sized favorites like The Best Turkey Pinwheels.
- Easy to Customize: You can switch up the cheese, add avocado, or try a different spread. No matter how you make them, they always turn out delicious and crowd-pleasing.

Ingredients
- Croissants – Soft, buttery croissants are the base of these sandwiches. Their flaky layers make them rich and satisfying. You can use store-bought or homemade croissants.
- Green Leaf Lettuce – Adds a crisp, fresh texture and a nice pop of color. Romaine or butter lettuce also work well if you prefer a different variety.
- Tomatoes – Juicy, ripe tomatoes bring freshness and a touch of sweetness. Slice them thin so they layer neatly in the sandwich.
- English Cucumber – Adds a cool, refreshing crunch that balances the richness of the croissant and turkey. Regular cucumbers can be used too; just peel them if the skin is thick.
- Mayonnaise – Provides creaminess and helps hold the ingredients together. You can substitute with cream cheese, Greek yogurt, or your favorite sandwich spread.
- Cheddar Cheese – Sharp cheddar adds a nice contrast to the mild turkey. Monterey Jack, Gouda, or provolone are great alternatives.
- Sliced Turkey Breast – The main protein that makes the sandwich hearty and flavorful. Use deli-sliced turkey or leftover roasted turkey for a homemade touch.
- Wooden Picks – Keep the sandwiches secure and easy to serve, especially when cutting them in half for parties or gatherings.

Instructions
- Prep the Veggies: Rinse the green leaf lettuce thoroughly and pat dry with a paper towel. Wash the tomatoes and English cucumber, then slice them into thin rounds. Arrange all the prepped vegetables on a large platter for easy assembly.
- Toast the Croissants: Slice each croissant in half horizontally. Toast the halves in a toaster until lightly golden. If you’re short on time, place all the halved croissants on a baking sheet and broil for about 30 seconds or until toasted to your liking. Allow them to cool to room temperature before assembling.
- Assemble the Sandwiches: Spread mayonnaise evenly on the top half of each croissant. Place a slice of cheddar cheese on the bottom half.
- Layer the Ingredients: Add one or two leaves of lettuce on top of the mayo, then layer three to five slices of turkey over the cheese. Add a few slices of tomato and cucumber on top of the turkey.

- Season: Sprinkle lightly with salt and freshly ground black pepper to enhance the flavor.
- Finish and Secure: Place the top half of the croissant over the layered ingredients. Insert two wooden picks on each side to hold the sandwich together, then slice in half for easy serving.
- Serve and Enjoy: Arrange the sandwiches on a platter and serve immediately, or cover and refrigerate if preparing ahead for a party or picnic.

Substitutions and Variations
Here are some of my favorite substitutions and variations:
- Protein Options: I usually use turkey, but ham, roast beef, or chicken breast work just as well. You can even mix two kinds for extra flavor.
- Cheese Choices: I like cheddar for its sharpness, but Monterey Jack, Gouda, or provolone melt beautifully too. Use whatever cheese you enjoy most.
- Veggie Add-Ons: Try adding sliced avocado, red onion, or baby spinach for more freshness. Pickles or banana peppers also add a nice tangy bite.

What to Serve with a Turkey Croissant Sandwich
Side Dishes
- These Turkey Croissant Sandwiches pair wonderfully with fresh, crisp salads. We love serving them with the Tomato Cucumber and Onion Salad for a light and refreshing side.
- For something a bit more colorful, try the Apple Cranberry Slaw or the creamy, tangy Creamy Cucumber Tomato Salad. Both add a nice balance to the buttery croissants.
- If you prefer something simple, the Easy Cucumber and Tomato Salad is always a quick and fresh option.
Appetizers
- For parties or brunch spreads, these sandwiches go perfectly with bite-sized starters like the Turkey Bites Recipe or Mini Open Faced Sandwiches.
- You can also serve them with elegant nibbles such as Smoked Salmon Canapés or a creamy Whipped Feta Dip for a delicious and well-rounded spread.

Frequently Asked Questions
Toasting adds a nice light crunch and helps the croissant hold up better with the fillings. If you prefer a softer texture, you can skip toasting, but make sure the croissants are fresh.
You can prep the ingredients a few hours in advance, but it’s best to assemble the sandwiches right before serving. This keeps the croissants from getting soggy and the vegetables crisp.
Slice each sandwich in half and secure both sides with wooden picks. Arrange them on a large platter with a few lettuce leaves or tomato slices for a simple but pretty presentation.
Store any leftovers in an airtight container in the refrigerator for up to 2 days. For the best texture, enjoy them fresh, as croissants can soften quickly once filled. If needed, reheat gently in the oven to refresh the croissant before serving.

Recipe
Turkey Croissant Sandwich
Ingredients
- 12 croissants
- 8 green leaf lettuce
- 4 tomatoes
- 1 English cucumber
- 1 cup mayonnaise
- 8 slices cheddar cheese
- 22 oz. sliced turkey breast 36 slices –
- salt to taste
- black pepper to taste
- 16 wooden picks
Instructions
- Thoroughly rinse the leaf lettuce and pat it dry with paper towels. Rinse the tomatoes and cucumber, then slice them into thin slices. Arrange all prepared vegetables on a large platter or serving dish.
- Slice each croissant in half and toast it in a toaster. Alternatively, place all halved croissants on a large baking sheet and broil in the oven for about 30 seconds, or until lightly toasted. Allow the croissants to cool to room temperature before assembling.
- Spread mayonnaise on the top halves of the croissants and place a slice of cheddar cheese on the bottom halves.
- Add one or two leaves of lettuce on top of the mayonnaise. Layer three to five slices of turkey on top of the cheese.
- Top with tomato and cucumber slices, then season with salt and pepper to taste.
- Place the croissant halves together to form sandwiches. Insert two wooden picks on each side of the sandwich, then slice in half to secure the layers.
- Arrange the sandwiches on a serving platter and serve.
Notes
- Pat the lettuce completely dry before assembling. This keeps the croissants from getting soggy.
- Toast the croissants lightly. A quick toast adds structure and helps them hold up better with the fillings.
- Let the croissants cool before adding the veggies. Warm croissants can wilt the lettuce and tomatoes.
- Slice the tomatoes and cucumbers thinly. Even slices layer neatly and make the sandwiches easier to eat.
- Use freshly sliced turkey if possible. It gives the sandwich a better texture and flavor than pre-packaged deli meat.
- Spread the mayo evenly. A thin, even layer prevents the croissant from drying out and helps the fillings stick.
- Secure each sandwich with wooden picks before slicing. This keeps everything in place and makes serving easier.
- Assemble just before serving. The croissants stay flakier and the vegetables keep their crunch.
- Make it ahead by prepping the ingredients separately. Store the veggies and turkey in airtight containers and assemble when ready to serve.
- Serve chilled or at room temperature. Both ways taste great, especially when paired with a fresh salad or light side dish.

Can these be made ahead of time?
Some prep can be done ahead of time like slicing croissants, vegetables and stored in the container. For the fresh look and taste, you need to assemble shortly before serving.

Thank you Tanya! Blessings to your family as well. 🙂
I just bought a large pack of these croissants at Costco over the weekend. I wrapped half of them in plastic wrap and stuck them in a large freezer bag. These sandwiches are very similar to what I make as well. Nothing can beat the taste of a croissant sandwich!
I agree with you. Thanks Katy! 🙂
