This Turkey Croissant Sandwich is one of my favorite easy lunches when I want something fresh and satisfying. The buttery croissant, crisp lettuce, and tender turkey make every bite so good. It’s simple, quick, and always hits the spot.
Thoroughly rinse the leaf lettuce and pat it dry with paper towels. Rinse the tomatoes and cucumber, then slice them into thin slices. Arrange all prepared vegetables on a large platter or serving dish.
Slice each croissant in half and toast it in a toaster. Alternatively, place all halved croissants on a large baking sheet and broil in the oven for about 30 seconds, or until lightly toasted. Allow the croissants to cool to room temperature before assembling.
Spread mayonnaise on the top halves of the croissants and place a slice of cheddar cheese on the bottom halves.
Add one or two leaves of lettuce on top of the mayonnaise. Layer three to five slices of turkey on top of the cheese.
Top with tomato and cucumber slices, then season with salt and pepper to taste.
Place the croissant halves together to form sandwiches. Insert two wooden picks on each side of the sandwich, then slice in half to secure the layers.
Arrange the sandwiches on a serving platter and serve.
Notes
Pat the lettuce completely dry before assembling. This keeps the croissants from getting soggy.
Toast the croissants lightly. A quick toast adds structure and helps them hold up better with the fillings.
Let the croissants cool before adding the veggies. Warm croissants can wilt the lettuce and tomatoes.
Slice the tomatoes and cucumbers thinly. Even slices layer neatly and make the sandwiches easier to eat.
Use freshly sliced turkey if possible. It gives the sandwich a better texture and flavor than pre-packaged deli meat.

Secure each sandwich with wooden picks before slicing. This keeps everything in place and makes serving easier.
Assemble just before serving. The croissants stay flakier and the vegetables keep their crunch.
Make it ahead by prepping the ingredients separately. Store the veggies and turkey in airtight containers and assemble when ready to serve.
Serve chilled or at room temperature. Both ways taste great, especially when paired with a fresh salad or light side dish.
