  • Beautiful on the Table: The bright green cucumber, white filling, and red tomato make these bites stand out on any platter. They’re simple, but they look like you put in extra effort.
  • Party-Perfect: These are always a hit at gatherings – easy to grab, not messy, and full of flavor. They pair nicely with other small bites like these Turkey Bites Recipe.

Ingredients

  • Cucumbers – The base of the bites, cucumbers add a crisp, refreshing crunch. I like to use English cucumbers for their mild flavor and fewer seeds, but any firm variety works well.
  • Cherry Tomatoes – These add a juicy pop of color and sweetness on top. Grape tomatoes can be used instead if that’s what you have.
  • Cream Cheese – Softened cream cheese creates a smooth, creamy filling that holds its shape when piped. You can use light cream cheese for a lighter version.
  • Mayonnaise – Adds richness and helps the filling stay silky. Greek yogurt can be swapped in for a tangier, lighter option.
  • Light Ranch – Brings a familiar herby flavor and creamy texture to the mix. Any ranch dressing you like will work here.
  • Dill – Fresh or frozen dill adds a bright, aromatic note that pairs perfectly with cucumber. Dried dill can be used in a pinch, just reduce the amount slightly.
  • Garlic Salt – Adds a subtle savory kick that balances the creamy filling. You can use a mix of garlic powder and salt if needed.

Instructions

  1. Prep Cucumbers: Rinse, peel, and slice each cucumber into ½-inch rounds. Using a ½ teaspoon measuring spoon, gently scoop out a small portion of the center to create a shallow well for the filling.
  2. Make Filling: In a bowl, combine softened cream cheese, mayonnaise, and light ranch. Mix until smooth and creamy.
  1. Add Flavor: Stir in dill and garlic salt, mixing just until combined.
  2. Pipe Filling: Transfer the mixture to a piping bag fitted with a star tip. Pipe about ¾ tablespoon of filling into each cucumber slice. If the filling doesn’t stick well, pat the cucumber slices dry with a paper towel before piping.
  1. Top with Tomatoes: Cut cherry tomatoes in half and gently press one half into the top of each filled cucumber bite.
  2. Finish & Serve: Sprinkle black pepper over the bites for garnish. Serve immediately or refrigerate for up to a few hours before serving. Enjoy these cool, creamy, and colorful appetizers!

Substitutions and Variations

Here are some of my favorite substitutions and variations:

  • Protein Options: I like to top these with a small shrimp or a bit of smoked salmon for extra protein. You can also add a slice of turkey or ham for a heartier bite.
  • Herb Swaps: Try using chives, parsley, or basil instead of dill for a different flavor. Fresh herbs always make the filling taste bright and fresh.
  • Cheese Mix: You can mix in a little feta or goat cheese with the cream cheese for a tangier filling. It adds great texture and flavor.

Frequently Asked Questions

Can I use a different dressing instead of ranch?

Absolutely. You can try Caesar, blue cheese, or even a simple sour cream and herb mix. Each will give the filling a slightly different flavor, but still taste great with cucumber.

What can I use instead of cream cheese?

You can substitute with whipped feta, goat cheese, or a thick Greek yogurt for a lighter option. Just make sure the texture is thick enough to pipe easily.

Can I make these ahead of time?

Yes, you can prepare the filling and slice the cucumbers a few hours in advance. Keep everything covered in the fridge and assemble just before serving so the cucumbers stay crisp.

How long do they keep?

Store any leftovers in an airtight container in the refrigerator for up to 2 days. The cucumbers may release a bit of moisture, so it’s best to enjoy them fresh. If needed, pat them dry and refresh the topping before serving again.

  • Add the dill and garlic salt, and mix just until combined.

Notes

  • Choose firm cucumbers so the slices stay crisp and hold their shape. English or Persian cucumbers work especially well.
  • Pat the cucumber slices dry before piping the filling to help the topping stick better.
  • Make sure the cream cheese is fully softened before mixing for a smooth, creamy texture.
  • Chill the filling for 10 to 15 minutes before piping if it feels too soft. It will hold its shape better.
  • Use a piping bag with a star tip for a clean, decorative look that’s perfect for entertaining.
  • Add the tomato halves just before serving to keep them fresh and juicy.
  • You can prepare the filling a day ahead and store it in the fridge. Assemble the bites right before serving.
  • Sprinkle a little extra dill or cracked black pepper on top for a fresh finishing touch.
  • Serve the bites on a chilled platter to keep them cool and crisp longer.
  • If making a large batch, arrange them in a single layer on a tray to prevent smudging the filling.

Hi. I made these last summer and were a hit. English cucumber, strawberry huller, but don’t remember if I did the filling as you stated. I just used a ziplock bag for my piping bag.

Would a herbed cream cheese be enough to do away with the ranch and/or Mayo?

  2. I hate throwing away fresh food… do you think it would be too cuke-y to put the scooped out middles into the filling? I realize it’s not a whole lot of waste, but if I can resort to using it, I will.

I made this for a tea party at my house. Prep was quick and easy! I had so much fun with the piping bag 😉 Among the dishes that stood out on the table. I felt like a pro serving these..thanks!

These are SO delicious — I made them without the tomato, and used any leftover filling to dip carrot sticks into. My whole family enjoyed it! Will definitely be making in the future!

Made these today for a wedding reception that we catered. They turned out delish! The filling was to die for! I have added this to my recipe book and will for sure be making these again. Thank you so much for sharing.

To help with mixing the filling (and any time mixing ingredients into cream cheese), add the more liquid ingredients a little at a time. Putting all the liquid ingredients in at once and then trying to incorporate them into the cheese is asking for lumps.

Perfect appetizer for summer party. And it was quick and easy to prep! One tip – use cucumbers that are of equal width. I didn’t have a piping tool, so I just spooned the dip into the cucumber. I bet you could prep the dip and cut the cucs ahead of time, then just assemble before serving.

Would they work with whipped cream cheese. They look delicious. I’m trying for my daughters bday party this weekend.

Added 3 drops of hot sauce and omitted the tomatoes for a July 4th pool party. Turned out great. Next time I will fill the cucumber cups with dip made from 1/3 cup sour cream, 1/3 cop mayonnaise and 1 Tbs taco seasoning for variety.

  12. Don’t know what I’m doing wrong but my filling is not enough to fill the cucumber slices and it’s chunky. I followed the measurements exact and the cream cheeese was at room temp.

    1. Hmm… It also depends on the cream cheese freshness. It sounds like the cream cheese is old and cannot cream while beating. Also, the cucumbers may be cut too thin and that can cause cream shortage. So sorry you’re having a hard time. Practice makes perfect. Give another try and see how it tuns out for you. I hope this helps.

I made these for Thanksgiving 2016 and they were a big hit! The tomatoes were a bit juicy, so after slicing them in half I just blotted them with a paper towel. I will definitely make these again! Thank you for sharing!

    1. I would not make them that far ahead. They will not look as beautiful and fresh. You can make them 4 hour before the party and keep it refrigerated. Thank you for asking Marlene. Have a Happy Thanksgiving! 🙂

    1. Hi Donna. All the prep can be done the night before, but actual assembling needed to be done about to 2 hours before serving (make sure you refrigerate them if prepared 2 hours ahead of time). I hope this helps. Thanks for your comment 🙂

        1. Honestly I think she means must be prepared no more than 2 hours before serving, that would make more sense. The juices from the veggies would probably start to make the cream cheese run if standing out for longer than that. I haven’t made them yet, but I plan on it.

  14. Live in the UK so I don’t know what “ranch” is. Does anyone know what it would be called in the UK or what could be substituted?

    1. Ranch dressing is a type of salad dressing made of some combination of buttermilk, salt, garlic, onion, herbs, and spices, mixed into a sauce based on mayonnaise or another oil emulsion. You can ado seasoning into mayonnaise to replace ranch dressing. I hope that helps.
