We still have a lot of tomatoes in our garden and cucumbers in the greenhouse. I just love the taste of fresh backyard-grown tomatoes and cucumbers so we’ve been making this salad frequently lately while this organic produce is still in season. This Creamy Cucumber and Tomato Salad taste great with just about any meal.
We recently had it with Breaded Parmesan Chicken Skewers and mashed potato; it was scrumptious. (I still have to share my version of mashed potatoes with you…best ever, in my opinion, I think you will agree once you try it! We use sour cream most of the time in this salad, but you may substitute it with plain Greek yogurt. You can cut all the veggies ahead of time just make sure you put dressing into the salad just before serving otherwise your salad will be too watery. Enjoy! 🙂
P.S. Don’t forget to head over to my family category and check out something new… I’ve updated most of my kid’s photos from July of 2014. To see photos click on “About” then “My Family”.
