    Creamy Cucumber and Tomato Salad

    We still have a lot of tomatoes in our garden and cucumbers in the greenhouse. I just love the taste of fresh backyard-grown tomatoes and cucumbers so we've been making this salad frequently lately while this organic produce is still in season. This Creamy Cucumber and Tomato Salad taste great with just about any meal.

    We recently had it with Breaded Parmesan Chicken Skewers and mashed potato; it was scrumptious. (I still have to share my version of mashed potatoes with you...best ever, in my opinion, I think you will agree once you try it! We use sour cream most of the time in this salad, but you may substitute it with plain Greek yogurt. You can cut all the veggies ahead of time just make sure you put dressing into the salad just before serving otherwise your salad will be too watery. Enjoy! 🙂

    Ingredients you will need:

    2 medium – cucumbers
    6 small – tomatoes
    1 bunch – chives
    ½ tsp. – salt or to taste
    ⅛ tsp. – ground pepper or to taste
    ¾ cup – sour cream or Greek yogurt

    Instructions:

    Wash and cut all the vegetables. Add sour cream, salt, and pepper. Mix well and serve right away.

      When I grew up, my family used to make this type of salad with olive oil and vinegar. When I met my husband, his family used to make this type of salad with sour cream. When I tried this salad first time with side of mash potato, I felt in love with the salad...
      So definitely, this salad is soooo delicious.

        That is funny how we get used to certain things. You can use either sour cream or oil for this salad, and they both taste awesome. We actually use one or the other, it depends on the main dish served with it. Thanks for your comment 🙂
