Main Beef Stew Ingredients:

  • Beef: Of course, we’ll first need some meat in your recipe. I’ve used stew beef cut of meat in this recipe and it’ll still give you incredibly tender, perfectly cooked beef in the stew.
  • Potatoes: We’ll also need some potatoes for our delicious stew. I’ve used two different types of potatoes, namely red potatoes and Yukon Gold potatoes (aka yellow potatoes).
  • Carrots: For a delicious and slightly sweet, yet perfect flavor we’ll also be using some chopped carrots in this recipe!
  • Onion: To elevate the flavor, even more, we’ll also be adding some onions to our dish.
  • Tomato sauce: Next, for the stew base one of the ingredients we’ll need is some tomato sauce. Make sure to not confuse it with tomato paste since these two are entirely different ingredients.
  • Beef bouillon: You’ll also need some beef bouillon to make your own beef broth to use as one of the liquids in this dish 
  • Water: We’ll also be adding a little water along with the broth so cook the beef to the next level and also have the perfect consistency for our stew.
  • Extra Virgin Olive oil: We’ll also be using some olive oil to brown our meat to the right level to get the perfect color and flavor.

Seasonings and Aromatics:

  • Garlic: Garlic really helps balance out all the flavors from the veggies and meat, plus it’s a perfect aromatic that can make any dish taste even better. We’ll need one large garlic clove for this recipe. 
  • Mrs. Dash seasoning: This is an incredibly delicious seasoning mix that includes onion powder, garlic, orange peel, lemon juice powder, cayenne pepper, and some other spices and herbs for a tasty, flavorful combo that goes perfectly in this stew.
  • Italian seasoning: Italian seasoning includes dried rosemary, basil, oregano, thyme, and marjoram that add a delicious aroma and flavor to the stew, making it smell and taste comforting and absolutely incredible. This way, you don’t need to add fresh rosemary or thyme, and makes the recipe more pantry-friendly. 
  • Seasonings: We’ll also be using some salt and black pepper in our dish to season it to the right level.
  • Bay leaves: For some aroma and flavor, we’ll be using some bay leaves as well.

How to Make Instant Pot Beef Stew (Step-by-Step)

Making this delicious Beef Stew in an Instant Pot is easier than you think! Here’s what you’ll need to do step by step to make it:

First things first, rinse and chop all the ingredients: red potato, yellow potato, carrots, onion, garlic, and parsley.

Next, turn the Instant Pot setting to saute. Add 3 tablespoons of olive oil into the Instant Pot. Once the oil is hot and simmering add beef and let the beef cubes sear undisturbed for about 5 minutes, or until the cubes have a nice dark brown crust at the bottom.

Distribute the meat cubes evenly at the bottom, to avoid too much watering. If the meat waters while sautéing that means the cubes are overcrowded. It’s best to divide the meat and sauté in two batches.

Turn the meat cubes around to different sides and sear for an additional 3 to 4 minutes.

Then add chopped onion, garlic, salt, Italian Seasoning, Mrs. Dash seasoning, and freshly ground black pepper. Combine everything well and sauté for 5 more minutes or until the onion is caramelized.

Next, add the rest of the ingredients (except chopped parsley): tomato sauce, water, yellow potatoes, red potatoes, carrots, bay leaves, and chicken bouillon. Mix it all together.

Close the Instant Pot with its lid, turn the valve to seal, and press the soup/stew cycle. Program the cooking time to 20 minutes on high pressure.

Finally, after it’s done cooking allow the pressure to release manually. Then, carefully open the lid. Stir in chopped parsley.
