One more benefit is that it's easy to clean. Since everything gets cooked in the same pot, and so there's only one pot to wash at the end. With this, you can save time and effort when cleaning the kitchen.
You can also depend on the Instant Pot to cook. You don't have to keep an eye on the water or make sure it doesn't boil over. Turn on the Instant Pot, set it to your desired settings, and go about your day. While the potatoes are in the pot, you can tend to other parts of the meal you want to make like the main meat dish.

This recipe uses simple ingredients. Here's what you'll need to make it at home:
Potatoes: Of course, we'll first need potatoes! I've used young homegrown red potatoes, but you can use whichever ones you can find in your local grocery store. I've also mentioned above which types of yellow potatoes to go for if that's what you prefer.
- Water: We'll also need some water to make sure we have the right amount of liquid to cook our potatoes.
- Chicken bouillon paste: To add a delicious depth of flavor, we'll be using some chicken bouillon paste to make chicken broth.
- Ranch sauce: This is a special ingredient that'll take your red potato recipe to the next level! I've used my homemade ranch, but you can use store-bought one as well.
- Seasonings: We'll also need some salt and pepper to season our red skin potatoes! We'll need 1 teaspoon salt and ¼ teaspoon black pepper.
- Garlic: You'll also need some garlic cloves to add a delicious garlic flavor to this delicious side dish.
- Parmesan: Parmesan cheese adds such a perfect touch to this instant pot recipe! You can add other cheese you might like as well.
- Fresh parsley: For a fresh flavor, we'll be adding some chopped fresh parsley to our side dish.

How to Make Garlic Parmesan Red Potatoes
Start by diluting chicken bouillon paste with warm water in a small glass bowl.
Next, stir in ranch, then add salt, black pepper, and grated (or minced) garlic. Stir everything together once more and set aside until ready for use.
Now scrape (or peel) and then rinse potatoes. Cut potatoes into small pieces, they should be about 1 inch in diameter. Place your chopped potatoes into a large glass bowl.
Now pour the ranch mixture over the potatoes, mix to coat all potatoes well, and transfer into the instant pot.
Turn the Instant Pot on, click on the pressure cook cycle, set the pressure to high, and then set the cooking time for 15 minutes.
Close the Instant Pot with lid, turn the valve to “Sealing” and it will start heating automatically. This takes about 15 minutes and the light will say “ON”. Then the instant pot will beep when heated and a 15-minute cooking time will start.
While the potatoes are cooking shred the cheese. Cover with plastic wrap to prevent from drying out, and set aside until ready for use.
Rinse and chop fresh parsley. Cover it with plastic wrap and refrigerate until ready for use to preserve freshness.
After the potatoes are done cooking the timer will beep. Using kitchen gloves turn the valve to “Venting”. Do not lean over the instant pot or the coming out steam will burn your face.
After the steam is released, open the lid, turn the Instant Pot off, and serve right away.
If you're not ready to serve the potatoes right after it's done cooking, simply keep the lid closed, and set the cycle to “keep warm” until ready to serve.
When ready to serve, add your parmesan cheese and chopped parsley before serving. Your delicious Garlic Parmesan Red Potatoes are ready to be served!

You can bake it in the oven using ceramic pan covered with foil. Bake for an hour or so at 350 F. The only difference it will have is that potatoes will not turn out as soft, but rather will be more on the dry side.
