What You Need to Make Strawberry Cinnamon Rolls at Home
All you need are some pantry-staple ingredients to make the tastiest Strawberry Cinnamon Rolls you’ve ever had! Here’s what you’ll need:
Batter Ingredients:
- Milk: The first thing we'll need is some milk. Whole milk is best as it has a higher fat content than lower-fat milk, which helps to make the dough tender and moist.
- Dry yeast: The next ingredient we're going to use is dry yeast, which will help our dough rise and become light and fluffy.
- Eggs: We'll need a few eggs also, they'll help bind our dough together while also adding a great richness and texture to it.
- Granulated sugar: Sugar adds the perfect amount of sweetness to our strawberry cinnamon roll dough. It also caramelizes while baking, creating a crispy-golden brown crust with a sweet and crunch texture.
- Butter: Our rolls just wouldn't be complete without the rich, buttery taste and texture that butter adds to our dough.
- Salt: We're going to use a little bit of salt in this recipe also, first to balance out some of the sugar's sweetness but also to help bring out the flavor of the other ingredients.
- All-purpose flour: When baked with the other ingredients, all-purpose flour will give our rolls a tender yet chewy texture.
Filling Ingredients:
- Strawberries: This is the ingredient that will make our rolls so unique! Strawberries have a sweet and slightly tart flavor profile, with a delicate and fruity aroma.
- Strawberry spread: We're going to use some strawberry spread in our rolls also to make sure that delicious strawberry flavor is in every bite.
Frosting Ingredients:
- Cream cheese: Cream cheese will give our frosting a tangy and creamy flavor that compliments the sweet and fruity filling of the rolls.
- Unsalted butter: We're going to use some more butter in our frosting also for its rich and buttery taste, but it's important to use unsalted so we don't add too much salty flavor.
- Pure vanilla extract: Is there any flavor better than vanilla? It's sweet and warm with a subtle floral and fruity aroma, perfect to go with the other flavors in our strawberry cinnamon rolls.
- Confectioner's sugar: Lastly we need some confectioner's sugar to sprinkle over the top of our finished rolls, adding just the right amount of sweetness to the finished product.
How to Make Strawberry Cinnamon Rolls (Step-by-Step)
Making these delicious Strawberry Cinnamon Rolls is easier than you think! Here's how to make it at home step by step:
How to Make Batter for Strawberry Cinnamon Rolls
First, pour 1 cup of milk into a small mixing bowl.
Microwave the milk for 30 seconds then stir it. Sprinkle the yeast in then let it stand on the countertop for 15 minutes.
Next, cut the butter into pieces, and place it into another small bowl. Then microwave it for 30 seconds or until fully melted. Set the bowl aside and let the butter cool.
Now, mix the eggs with sugar on high for five minutes with a KitchenAid or stand mixer.
After that, reduce the mixing speed to medium and add salt and the melted butter we prepared earlier.
Continue mixing for another two minutes.
Gently stir the milk and yeast mixture one more time, then add it to the butter, egg, and sugar mixture.
Mix the ingredients together for 1 more minute.
Next, change the whisker attachment on your KitchenAid to a dough hook then stir in 1 cup of flour at a time. You can also do this step by hand if you don't have a KitchenAid.
When you have 1 cup of flour left, stir in small amounts of it at a time until the dough is ready. You'll know it's ready when it doesn't stick to the bowl or your hands anymore.
After your dough is ready, cover the mixer bowl with plastic food wrap and place it in a warm place for 1-2 hours to let the dough rise.
I usually preheat the oven to 105F then turn it off and put my dough bowl inside, but any warm spot in your kitchen will work also.
How to Fill Strawberry Cinnamon Rolls
Thoroughly wash your strawberries and remove all the stems, then cut them into small pieces. Set this bowl of cut strawberries aside until we're ready to use them.
How to Make the Frosting for Strawberry Cinnamon Rolls
Time to make our delicious frosting! Add all frosting ingredients from above into a medium mixing bowl.
Mix all the ingredients together until all they're thoroughly combined, then place the frosting into the fridge until we're ready to use it.
How to Assemble Strawberry Cinnamon Rolls
Start by preheating the oven to 350 F.
At this point, the dough we let rise earlier should have roughly tripled in size. Place it onto a large cutting board with a lightly floured surface and roll the dough with a rolling pin into a large rectangle, about 16" X 20" inches.
Next, spread the strawberry spread evenly on top of the rolled-out dough square.
Evenly distribute the cut strawberries onto the dough, then roll it tightly into a log.
Pinch the ends to the dough to make sure no filling comes out.
Using a piece of string, cut the dough log into pieces about 1 ½ inches thick.
After that, place the cut pieces onto a large 12" X 16" baking sheet or pan lined with parchment paper and let them rise for another 30 minutes.
Bake the rolls for 25 minutes at 350 F or until golden brown.
Remove them from the oven and let the rolls cool to a warm temperature before putting the frosting on.

Tips for Making the Best Strawberry Cinnamon Rolls Ever
Be precise: The most important tip for making the best strawberry cinnamon rolls ever is to follow the instructions carefully. Baking is a science and requires precise measurements and steps, so make sure to measure your ingredients accurately and follow the recipe step by step.
Use fresh ingredients: Using fresh ingredients will make a big difference in the taste of your strawberry cinnamon rolls. For the strawberries, make sure they are ripe and juicy for the best flavor. Also, make sure your yeast is fresh and not expired.
Don't overwork the dough: When mixing and kneading the dough, make sure not to overwork it as this can result in tough rolls. Mix and knead until just combined and smooth, then let it rise.
Let the dough rise in a warm place: To make sure the dough rises properly, place it in a warm place. You can use your oven, as mentioned in the recipe, or find another warm spot in your kitchen. The warmer the environment, the faster the dough will rise.
Roll out the dough evenly: When rolling out the dough, make sure to roll it out evenly so that it cooks evenly. You may even use a ruler or measuring tape to make sure you have the correct size and shape.

These rolls turned out perfect with fresh strawberries. Next time, I'll be sure to double this recipe. I used less sugar for frosting, and we loved it.

Hi Valya,
Thank you for sharing your recipe for strawberry rolls, I love working with yeast dough and am always on the lookout for new recipes. While waiting for the dough to rise, I had a thought: would this be a good recipe to make sweet rolls out of? How about poppy seed roulade? I haven't yet found a perfect (to me) recipe for either of those and I thought I might try this one. Do you use this dough to make anything else besides strawberry rolls?
I appreciate you taking the time to answer all of my questions so quickly!

Hi, Marina! Oh, we love strawberry rolls very much! Yes, this is my basic yeast dough and it works fine for any rolls. My very favorite yeast dough is with the addition of more eggs and addition of mayonnaise. For example like in this recipe. Sweet buns, bread, and even roulades taste absolutely delish if this recipe is used. Thank you for making my recipes and appreciate your comment. 🙂

Thank you for your reply!
I'll try the dough you provided a link to next time. Today is the first day that feels like fall in our neck of the woods - cloudy and chilly, and that makes me want to retreat to my happy place and bake all day:)
