Strawberry Rolls with Cream Cheese Frosting

  • Batter Ingredients:
  • 1 cup – warm milk
  • 1 tsp. – dry yeast
  • 2 large – eggs
  • ½ cup – granulated sugar
  • ½ cup – butter
  • ¼ tsp. – salt
  • 4 ½ - 5 cups - all-purpose flour
  • Filling Ingredients:
  • 2 cups – fresh strawberries
  • ½ cup – organic or homemade strawberry spread
  • Frosting Ingredients:
  • 8 oz. – cream cheese room temperature
  • 6 tbsp. – unsalted butter room temperature
  • 1 stp. – pure vanilla extract
  • 2 cups – confectioners’ sugar
  1. Pour 1 cups of milk into a bowl. Microwave for 30 second, stir milk, and then sprinkle yeast. Let it stand on the counter top for 15 minutes. Stir milk and yeast before adding to the batter.
  2. Cut butter into pieces and microwave for 30 seconds. Set aside and let it cool until ready.
  3. Mix eggs with sugar on high for five minutes.
  4. Reduce the speed to medium and add salt and melted butter. Let the mixer continue mixing for another two minutes.
  5. Add milk with yeast and let it mix for another minute.
  6. Change the whisker attachment to a dough hook. Stir in flour one cup at a time (if you don’t have kitchen aid mixer with hook attachment you can easily do this step by hand). When you will have a cup of flour left to stir in you need to see how much more of flour is needed. The dough shouldn’t stick to the bowl or hands as the end result.
  7. Remove mixer hook attachment; cover the mixer bowl with plastic food wrap. Place the bowl into the warm place (I preheat the oven to 105 than turn it off so the oven can be warm but not hot) for 1-2 hrs for the dough to rise.
  8. Filling Instructions:
  9. Wash strawberries and remove the stems. Cut strawberries into small pieces. Set aside until ready to use.
  10. Frosting Instructions:
  11. Add all frosting ingredients into a medium bowl. Mix it all together until all combined. Place the frosting into the fridge until ready to use.
  12. Assembling the Rolls:
  13. Preheat oven to 350 F. After the dough tripled in size, remove it onto a large floured cutting board. Roll the dough out into a 16 X 20 rectangular.
  14. Spread strawberry spread evenly on top of the rolled out dough. Spread out cut strawberries. Roll the dough tightly into a log. Pinch ends to the dough.
  15. Using piece of string cut rolls out 1 ½ inches thick. Place rolls onto a large 12 X 16 baking sheet lined with parchment paper. Let the rolls rise for 30 minutes before baking.
  16. Bake rolls for 25 minutes at 350 F or until golden brown. Remove from the oven and let the rolls cool to warm temperature before frosting the rolls.
