Many people want to drop a few pounds by eating a little healthier after the Holidays. We probably had lots of chocolate, cake, many goodies, right? Now it’s time to switch gears to something that goes into that lovely concept.
Today I am offering you a Spring Mix Salad Recipe that I have been eating for some time now for lunch because it’s so good. I use one egg plus one egg white for extra protein in this salad, but if you want to ease into it, you may start with the original stuff. 🙂 I love the crunchy veggies, and the sunflower seeds add a delicious taste to this yummy salad.

Oh my! I can’t believe that she will be learning to drive. It was a big decision for us to make. From the beginning I planned to drive her where ever she needs to go. Now the girls are getting more active out and about; in church, state exams that require them to be taken at the school (even though they are home schooled), piano lessons, youth and adult choir practices, Russian school teaching in church, youth gatherings, teacher meetings, etc.
I was getting a little tired of all those rides all the time. It would be a bit impractical now that she is old enough to drive. I started thinking I have to let this go sooner or later, but wanted to be their shofer and keep them safe. People, including my dad, kept telling me that because she's the oldest, it’s hard to take this step and let the childhood go, which is what driving symbolizes essentially.
Our original plan was for her to drive at 18, have her closer, longer. She doesn't want to grow up quick and didn't mind. But we decided to give her the gift of letting it happen now. So here we go, Elona will start her driver’s ed program this Tuesday, January 20 2015.
After everyone went to bed, her younger siblings stayed up and put up decorations the night before her B-Day. I was very surprised too when I woke up the next morning to see all the decorations and how quiet they were since the kitchen and nook are just next to the master bedroom.
She was very happy with her Oreo Ice Cream Cake.
Chicken casserole with mushrooms with mashed potatoes was her dish request (we have tradition in our family that b day person can request their favorite dish).
Ok. Let get back to the delicious salad recipe.
Ingredients you will need:
2 cups – Organic Spring Mix Salad
15 red - cherry tomatoes
20 minis – baby carrots
1 small – cucumber
1 whole – hard boiled egg + one egg white
¼ cup – lightly salted sunflower seeds
¼ cup – light ranch
Instructions:
1. Place salad into a salad bowl. Wash vegetables. Slice cucumber. Cut egg and egg white into pieces. Lay out all the veggies, eggs and seeds over salad.
2. Drizzle with ranch.
Mix well and enjoy!
