Cucumber Bites Appetizers
I make these Cucumber Appetizer Bites whenever I need a quick, no-fuss snack that feels a little special. The creamy ranch and dill mixture pairs perfectly with crisp cucumber slices. They’re light, flavorful, and always a crowd-pleaser.

Ingredients
- 2 Cucumbers
- 12 cherry tomatoes
- 4 oz. cream cheese softened
- 1 tbsp. mayonnaise
- 3 tbsp. ranch
- 1 tbsp. frozen or fresh dill
- ¼ tsp. garlic salt
- Black pepper for garnish
Instructions
- Rinse, peel, and slice the cucumbers into ½-inch rounds.
- Using a ½ teaspoon, remove a small portion from the center of each cucumber slice.
- In a bowl, combine the softened cream cheese, mayonnaise, and ranch. Mix until smooth.
- Add the dill and garlic salt, and mix just until combined.
- Transfer the mixture to a piping bag fitted with a star tip. Pipe about ¾ tablespoon of filling onto each cucumber slice.
- If the filling does not adhere well, pat the cucumber slices dry with a paper towel before piping.
- Cut the cherry tomatoes in half and place one half into the center of each cucumber bite.
- Sprinkle with black pepper and serve.
- These appetizers can be prepared several hours in advance. Refrigerate until ready to serve.
Notes
- Choose firm cucumbers so the slices stay crisp and hold their shape. English or Persian cucumbers work especially well.
- Pat the cucumber slices dry before piping the filling to help the topping stick better.
- Make sure the cream cheese is fully softened before mixing for a smooth, creamy texture.
- Chill the filling for 10 to 15 minutes before piping if it feels too soft. It will hold its shape better.
- Use a piping bag with a star tip for a clean, decorative look that’s perfect for entertaining.
- Add the tomato halves just before serving to keep them fresh and juicy.
- You can prepare the filling a day ahead and store it in the fridge. Assemble the bites right before serving.
