How to Make Mint Chocolate Cake Frosting
Next, let’s make some delicious Mint Chocolate Cake frosting for our cake!
Start by beating softened cream cheese and sugar together for 30 seconds in a large mixing bowl or the bowl of a stand mixer at medium speed. Scrape down the cream off the sides of the mixer bowl and beat again for 1 more minute.
Next, add Greek yogurt and beat the cream for a minute, scraping down the sides of the bowl when necessary to ensure all cream gets mixed in well. Now add a cool whip and repeat the same mixing instructions.
Then add ⅛ tsp. of leaf green, 1/16 tsp. of teal coloring gel, and about 4 drops of spearmint natural oil. In case you’re using spearmint extract instead of the natural oil, you may need more drops. I recommend adjusting to your preferred taste. Mix it all well on high for a minute.
Scrape down the sides and the bottom of the mixer bowl and mix again for a minute. You may need to repeat scraping several times to ensure all the color is well mixed into the cream. You can also stir it in with a hand whisk to make sure it’s all incorporated well.

Time to assemble our delicious Mint Chocolate cake! Start by cutting each sponge cake in half. Place and level about 2 cups of frosting in between each sponge cake layer.

There are many ways you can decorate your Mint Chocolate Cake. Here’s a beautiful and classic way of doing it. Start by making a lined design along the sides of the cake using a Wilton triangle shaper (steps shown here).
Next, refrigerate the cake for an hour. While the cake is setting in the fridge, make the chocolate ganache and let it cool.
Now transfer the ganache into a small Ziploc bag and cut a small corner of the bag. First, pour the chocolate ganache along the top edges in a circular motion to form the drip design, then fill in the middle of the cake.
Use an offset spatula to even out the chocolate on the top of the cake. Shave some Andes Chocolate Mints onto the center of the cake. You can also use some chocolate chips for a Mint Chocolate Chip cake topping.

I was going to use whipping cream instead of cool whip. Do you need to whip the whipping cream first or do you add it as a liquid?

No, not necessarily. I've been using heavy cream instead of Cool whip in my recipes lately. Check out How to Make Roll Cake Frosting on how to add liquid heavy cream into the frosting. It will thin out at first then it will thicken. Let me know if you have any other questions.

Hi there, I need a taller cake so I am doing a 1.5x recipe. I only bought 1 16 oz pkg of cool whip, and I wont have time to get more. I've never made frosting with cool whip before.
My question is, is there something else I can use to sub in for the missing 8oz of cool whip? Or, should I just omit and 1.5x the rest of the ingredients? Or, is the frosting recipe generous enough that I can leave it all at a 1x and not increase it at all?

You can substitute cool whip with heavy cream (40%) for entire cream recipe if you’d like. I actually don’t use cool whip in my recipes anymore, but use heavy cream instead. 2cups of cold liquid cream equals to 8 oz of cool whip. I don’t know how cool whip and heavy cream will combine together. You can just make an additional .5 portion of cream using heavy cream. The texture is about the same, but I would use it inside the cake since the amount is small, and then use the cream with cool whip on the in and outside of the cake, so the outer cake cream won’t differ. That small amount of cream made out of the heavy cream will not be noticeable in look and taste.
Use this recipe to mix the cream using heavy cream. I hope this helps. Let me know if you have any more questions.
