Get your weekend off to a great start with these hearty and delicious pancakes. They are made from scratch but are simple and oh-so-incredible! Are you reluctant about store bought pancake mix, that leaves you with that strange (but hard to pinpoint) after taste? Then this is a recipe you should really try. With quality ingredients, you're sure to feel safe, happy and satisfied. And they taste real, healthy and absolutely fantastic! Just like mamma's old-fashioned country cooking. During busy weekday mornings, there usually isn't much time to prepare a big breakfast before everyone rushes off to school or work, but when it gets to the weekend - we do it upright! Big breakfast; these marvelous pancakes, bacon, eggs, orange juice, Hot Caramel Vanilla Latte, the whole
... shebang! Pancakes are at the center and a comfort breakfast no one can resist. You could call them a childhood's bliss.
These flavorful golden pancakes are thick, fluffy and filling. With crispy edges, organic maple syrup poured over the soft middle, and berries to top it off, makes you marvel at the taste! You will be licking your plate like my kids do. You have to try them to know what I mean!
Ingredients:
2 cups (170 g) – organic all-purpose flour
2 tsp. (10 ml) – baking powder
1 tsp. (5 ml) – baking soda
¼ tsp. (1.25 ml) – sea salt
1 ½ cups (350 ml) – whey
1 large – egg
1 tsp. (5 ml) – pure vanilla extract
1 tbsp. (15 ml) – unsalted butter (melted)
1 tbsp. (15 ml) – raw honey
¼ cup (60 ml) – Greek yogurt
Butter for sautéing
Pancake Dispenser (optional)
Instructions:
1. Combine all the dry ingredients: flour, baking powder, baking soda, and salt together and set aside until ready for use.
2. Beat whey and egg together well with a hand whisk. Then add the remaining ingredients: vanilla, melted butter, honey, and Greek Yogurt. Whisk again with a hand whisk for another minute or so.
3. Add wet ingredients to dry ingredients and mix all together well until batter is smooth in texture.
Cooking Instructions:
Heat the skillet over medium heat, then add ¼ tbsp. of butter. With a pancake dispenser (optional, but it helps form pancakes in that perfect round shape with no dripping mess), pour pancake mix into heated and buttered pan. Cook pancakes for about 1 to 1 ½ minute on each side or until golden brown.
Serve warm with any of your favorite fruit, organic maple syrup or homemade strawberry syrup and cream. Don’t forget to add scrambled egg, Broiled Bacon, and Hot Vanilla Caramel Latte to complete your breakfast. 😉

You can make farmers cheese and you will have whey. You can substitute with buttermilk, but you may need to adjust the amount of flour. Thanks for your comment 🙂
