The best ones will always be the ones that are firm to the touch and will not turn to complete mush, but ultimately, this comes down to preference or what you have on hand.
Tart apples help cut out the buttery flavor that many puff pastries have, so they're a great choice. And for this reason, I've used Granny Smith apples in this recipe, but you can also go for Pink Lady apples instead.
Other varieties of apples that work well are Gala, Fuji, Honey Crisp, and Golden Delicious
How to Keep the Turnover from Leaking?
The only problem beginners ever face with turnovers is the risk of leakage. But with this recipe, you won't have that problem at all.
Two problems can cause a turnover to start leaking. The first is if the mixture is too runny. This won't be a problem at all when you follow my recipe. I've added a secret ingredient to the apple mixture to get it to stay together and have a perfect consistency.
The second part is to make sure to seal the turnovers properly. I'll teach you exactly how to do that by simply crimping the sides with a fork and sealing it with a little liquid.

- White sugar: We'll next need some regular white sugar to add the right level of sweetness to our apple mixture.
- Brown sugar: Then we'll also need some brown sugar because it'll add a deeper depth in flavor, which will perfectly compliment the cinnamon we'll also use. I've used light brown sugar for this recipe.
- Cinnamon: Apples and cinnamon is truly the best combination ever. We'll be using some cinnamon powder to lightly add warmth to our delicious apple filling.
- Salt: To balance out all the flavors, we'll be using some salt. I've used sea salt in this recipe.
- Xanthan gum: This is the secret ingredient I've been mentioning! It's an effective thickening agent, emulsifier, and stabilizer which prevents ingredients from separating and that's exactly what we're looking for when making our apple mixture.
For Apple Turnover Topping:
- Cinnamon: We'll be making a delicious cinnamon sugar topping for our turnovers, and for that, we'll first need some ground cinnamon to add that warm, fall flavor to our delicious apple turnovers.
- Sugar: Next, we'll need some sugar to get it to the right level of sweetness that perfectly compliments our puff pastry apple turnovers and the slight buttery flavor it'll have. I've used raw cane sugar in this recipe for that delicious flavor.
- Egg: To get the cinnamon sugar topping to stick, and to also give your turnovers the perfect golden brown color, we'll be making an egg wash. So for that, you'll need some large egg.
- Water: We'll also add some water to our egg wash to get it to the right consistency.
- Puff pastry sheets: And then, of course, we need some puff pastry sheets! I've used two pastry sheets that are 8x14 inches big.

Making these delicious Puff Pastry Apple Turnovers is so much fun! They're easy and simple to make but they're so satisfying and rewarding! Here's what you need to do to make it step by step:
How to Make Apple Filling for Puff Pastry Turnovers
Let's start by first making our apple-filling mixture!
To do this, take a small glass bowl and combine all dry ingredients in it, namely white sugar, brown sugar, cinnamon, sea salt, and Xanthan gum.
Stir all together to combine and set aside until ready for use.
Next, rinse, peel, and chop apples. I like to use a handy onion chopper for this, but you may chop them any way you like. Place the chopped apples into a 5-quart saucepan.
Sprinkle the dry cinnamon-sugar mixture over the apples and mix until the apple cubes are well coated. Then add vanilla extract and mix once more.
Place apple filling mixture onto a stove burner and bring it to a cooking stage, stirring constantly. As soon as it starts simmering, cook for 2 minutes, always stirring constantly to prevent the sweet liquid from burning on the bottom of the pan.
Remove from heat and cool to warm before using. While the apple filling is cooling down, it will cook a bit more in the heat, so don't worry if the filling looks slightly undercooked at this point.

Time to make our topping next!
While the apple filling is cooling, prepare the topping. Combine coarse cane sugar and cinnamon and set aside until ready for use.

Crack an egg into a small bowl. Then add water and whisk together until well mixed. Set aside until ready for use.
How to Assemble Puff Pastry Apple Turnovers
Let's put everything together! Start by preheating the oven to 375 F.
Cut the pastry dough into squares. I used 4x4 square inch pastry squares while making this recipe.
Next, place a heaping tablespoon of the apple filling in the center of the dough.
Lightly wet the edges and then fold the pastry across diagonally to form a triangle.
Using a fork, crimp together the edges. I prefer to first pinch the ends together with your fingers, as in the process of making perogies, then finish crimping them using a fork for the design.
Transfer the turnovers to the prepared baking sheet or baking tray lined with parchment paper, spacing them at least 2 inches apart.
Cut small slits on the tops of each turnover then brush the tops with the egg wash prepared earlier. Sprinkle with the cinnamon sugar topping.

Bake your turnovers for 20 minutes or until they turn golden brown. Remove from the oven and cool to warm before serving.
Safety caution: even though the turnover may be warm to touch on the outside, the inside filling may still be very hot! Check the inside first before serving them to children.
Enjoy them with milk, tea, or a homemade latte! Before serving, you can drizzle some vanilla glaze on it, or dust powdered sugar on it. It also goes great with a scoop of vanilla ice cream on the side.
How to Store Leftover Puff Pastry Apple Turnover
Cooked puff pastry apple turnovers can be stored in an airtight container in the fridge for up to 3 days.
Plus, you can even freeze them! Unbaked turnovers can be stored in the freezer for up to 2 months. Don't thaw them, instead just bake them for an extra 4 minutes and you'll be good to go.
I don't recommend freezing baked puff pastry apple turnovers as they can get soggy.
