Let’s start by making the peanut butter layer first. To do this, line a small 8-inch x 8-inch pan with parchment paper and set it aside.

Next, crush the Biscoff cookies or cookies of your choice and set them aside.

Melt butter, and set aside.

Now add all ingredients into a medium bowl: crushed cookies, peanut butter, melted butter, maple syrup, vanilla extract, and a pinch of salt, then stir everything just until it’s combined.

Add all the ingredients into a bowl and mix to combine.

Next, press the peanut butter mixture evenly into the prepared baking pan.

Let the baking dish chill in the fridge for an hour to firm.
