    This Scrambled Egg Sandwich is the perfect breakfast recipe that you can prep ahead of time in only 10 minutes! Simply prep them before heading to bed and wake up to a delicious and nutritious breakfast sandwich that's perfect for those busy days! What's best is that it's also ideal for freezing and warming up in the morning so you can make batches of these ahead of time!

    My kids absolutely love these too, so trust me these are definitely kid-friendly! Kids are somehow always hungry, and these sandwiches are a quick and easy way to make sure they don't start school on an empty stomach. And adults seem to love it just as much! These are incredibly versatile and you'll absolutely love them!

    These sandwiches have avocado and eggs, which are among the few foods that I classify as "superfoods". They contain a little bit of almost every nutrient we need. These scrambled egg sandwiches are truly delicious and nutritious!

    Bacon and cheese complete the delicious smoky, salty, and cheesy flavors of a super tasty breakfast sandwich that makes you get up early in the morning and keeps you going throughout the day!

    • Croissant buns: You can pick up a pack of these at your local bakery or grocery store. They have a delicious light buttery flavor that goes great with the eggs and bacon.

    Quickly and simply prepare your bacon in the oven by broiling, instead of messy frying on the stovetop.
    • Cheddar cheese: Next we'll need some cheddar cheese to melt on our sandwiches. You can pick your favorite kind, but I've used medium cheddar for this recipe. 
    • Avocado: Avocado slices really take these egg sandwiches to the next level. They're buttery, creamy, and slightly nutty, with tons of vitamins and minerals.

    How to Make Scrambled Egg Sandwich (Step-by-Step)

    Making scrambled egg sandwiches is easier than you think. Here's how to make it step by step:

    Start by cutting the croissant buns in half. You can lightly toast them if you prefer, but this is optional. 

    Place a slice of cheese on each bun and a strip of bacon. You can also cut the bacon into pieces.

    Next, place egg and 3 slices of avocado onto the stack. Lightly sprinkle the avocados with salt and pepper.

    If your eggs are freshly made, the heat will help melt the cheese over the small curds of the eggs.

    Place the top of the bun on the sandwich and serve.

    NOTE: If you're making these sandwiches for next morning's breakfast, do not place avocado onto the sandwiches. Instead, wrap each individual sandwich in plastic food wrap or aluminum foil and refrigerate.

    Before consuming, unwrap the plastic wrap, heat the sandwich in a toaster oven until heated through, then place the avocado. This helps the avocado nut get mushy while sitting in the fridge or freezer overnight.

    Use ripe avocados: Make sure your avocados are properly ripe for your sandwiches. They should be darker in color and their skin should yield to firm, gentle pressure.

    This Scramble Egg Sandwich recipe is absolutely perfect as is, but here are some variation ideas you can try to change up the flavor:

    • Try different bread: Croissants are great for these sandwiches, but they're not the only option. Try regular toast, bagels, English muffins, or brioche buns too. 
    • Use more meat: You can replace or add to the bacon with other meats. Try adding a few slices of ham or a sausage patty for an even heartier breakfast. 
    • Add vegetables: For added nutrients and extra flavor, top your sandwiches with some fresh vegetables. Onion, tomato, arugula, baby spinach, and regular spinach are all great options.

    How to Store Leftover Scrambled Egg Sandwich

    Leftover scrambled egg sandwiches can be stored in an airtight container and refrigerated for up to 3 days or frozen for up to 3 months.

    If you plan to eat them the next day, they’ll stay fresh longer if you wrap each sandwich separately in aluminum foil or plastic wrap before storing them. For freezing, I recommend using freezer paper since this type of paper prevents food from freezer burns.

    To reheat your sandwiches, simply unwrap them and heat them in a skillet over medium heat until warmed through, or microwave them for 1-2 minutes.

    Alternatively, you can reheat frozen sandwiches in the oven. To do this, place wrapped croissants on a baking sheet and reheat them in the oven for 2-3 minutes if fresh, and for about 7 minutes if frozen at 400 F. 

    They can be topped with different vegetables, meats, and sauces for an almost entirely new flavor.
