Making these No Bake Strawberry Kiwi Cheesecake Parfaits is incredibly easy using readily available ingredients. Here’s what you’ll need to make them at home:
- Graham crackers: This will make the base of our parfait. You’ll need one small individual pack or 6 pieces for these individual treats.
- Cream cheese: To make our delicious cheesecake mixture, we’ll need some softened cream cheese. The better the quality, the better the taste!
- Sugar: You’ll need some regular granulated white sugar to lightly sweeten these parfaits to the right level! We’ll need ¼ cup or 4 tablespoon sugar.
- Heavy whipping cream: To make it perfectly creamy and delicious, we’ll be using some heavy whipping cream in our cheesecake mixture.
- Strawberries: This is one of the star ingredients in this recipe! We’ll be adding some chopped strawberries to make up our Strawberry Cheesecake Parfait.
- Kiwis: Kiwis go incredibly well with the beautiful flavor of strawberries. Since this is a Strawberry Cheesecake Parfait recipe, so it’s not strictly necessary but it definitely elevates the taste!

This is an incredibly fancy-looking dessert, but it’s super easy to make. Here’s what you need to do step by step to make it:
Start by crushing graham crackers in a food processor or by using a rolling pin (you can add a couple of tablespoons of melted butter to the crumbs for them not to be so powdery). Set it aside in a medium bowl until ready for use.
Next, rinse and cut the fruits into small pieces.
Time to make our cheesecake layer. In a bowl of a stand mixer, beat cream cheese and sugar until creamy consistency and sugar granules are dissolved. Using a silicon spatula scrape the sides of a mixer bowl couple of times if necessary.
Next, add heavy cream, scrape the cream cheese off the sides of the mixer bowl, and start beating on low gradually increasing the mixing speed and beating it until smooth in texture for a minute or so.
How to Assemble Strawberry Kiwi Cheesecake Parfaits Cups
Let’s assemble it all! Add 2 tbsp. of crushed graham cracker crumbs onto the bottom of each cup. Using these crushed cookies will give an incredible texture to the dessert.
Next, fill a 16" piping bag and 2A large round tip and pipe ¼ cup of the creamy cheesecake cream into each cup.
Top each cup with cut into small pieces strawberries and kiwis.
Fill a 14" piping bag and a 6B tip with the remaining creamy cheesecake cream and pipe a star on top of each fruit cup, and then sprinkle the cream star and fruits with the remaining graham cracker crumbs. You can also add a dollop of cream instead.
Insert the spoon into each Parfait cup, and chill in the refrigerator for at least one hour before serving.

You can store leftovers in the fridge for up to 2 days, but after that the cookie base will start getting soggy and so will the fruits.

I have a very soupy (unuseable) cheesecake filling. I softened cream cheese at room temperature and accurately measured the heavy cream. I added an extra block of cream cheese and it’s still soup. I’m going to try refrigerating overnight before filling cups, but I can’t use it the way it is

Sounds like you did not finish whipping the cream after adding liquefy heavy cream to the cream cheese mixture. Try whipping it until it becomes thick. I hope this help!

Yes, totally ok. I’ve made and stored them like that many times. I like to place them in a tall container with a lid to prevent the fruit from drying out. It will taste the same, but the look will fade away a little, because the fruit will dry out and the crumbs will become wet. But if you need to make them a day ahead then keep them in the closed container after assembling, and sprinkle the crumbs before serving. I hope this helps.
