What are Chicken Skewers?
Chicken skewers are marinated chicken chunks threaded onto skewers, generally with some veggies thrown in for good measure though it's definitely not necessary to do so.
You can stack cubed chickens on top of each other or alternate the chicken pieces with veggies. Skewers don’t need to only be chicken ones, there are also beef skewers or just vegetable skewers that we can make.
Today we’ll be making the most delicious Breaded Parmesan Chicken Skewers that will take chicken skewers to the next level! They’re absolutely delicious and I’m sure your family is going to fall in love with them.
What is a Skewer?
A skewer is a thin stick made of metal or wood (usually bamboo) that holds pieces of food.
The food is threaded or 'skewered' onto the skewers and grilled or fried together.
This means to stick the meat and vegetables through the sharp end of the stick and line them up on it.
In most cases, it is utilized while simultaneously grilling or roasting a variety of meats and vegetables in the same dish.
But some of the most delicious skewer dishes are the ones that have just meat on them, like the way we’ll be grilling them today! It’s absolutely scrumptious!
How Long Should I Marinate the Chicken?
The longer you keep the chicken in the marinade, the richer and better the flavor will be. For optimal effects, leave it for at least 6 hours or overnight!
You can theoretically marinate it for only an hour, but the flavor will suffer as a result.
However, if you have guests coming over and want to prepare them fast, go for it!
Can I Prep my Skewers the Night Before?
Absolutely! This is why they're ideal for a barbeque party. While you may marinate them for only an hour, they will taste even better if you marinade them overnight.
Simply arrange the skewers on a pan or baking sheet and wrap them in plastic wrap. Place them in the refrigerator overnight and remove them just before you're ready to cook them. Super simple and delicious!
Can I Make Chicken Skewers Ahead of Time?
Yes, you absolutely can! And that’s also what’s the best part about this recipe!
What I absolutely love about this recipe is that you can prepare it ahead of time of need.
Place all cooked skewers into a ceramic pan, and store them in the fridge. When guests arrive just cover the pan with aluminum foil and heat it in the oven and your delicious, perfectly cooked Chicken Skewers are ready.

Can I Add Vegetables to Chicken Skewers?
I haven’t included vegetables in my Chicken Skewers recipe but the incredible thing about this recipe is that you can customize it according to whatever you want!
You can add any kind of vegetables that you like the most including red onions, bell peppers, fresh garlic cloves, cherry tomatoes, mushrooms, or even pineapple chunks! These chicken kabobs are also great on the side of some salad!
Make it your own by experimenting with any vegetables you have on hand. The best part about making Chicken Skewers is how versatile they are! In fact, you can also garnish them with some fresh herbs before serving.
What You Need to Make Chicken Skewers at Home
Chicken: I’ve opted for boneless skinless chicken breasts in my recipe, but you can also choose to use skinless chicken thighs instead. The marinade in this recipe goes perfectly with the subtle flavor of chicken breasts.
Parmesan cheese: This will add that quintessential, delicious parmesan flavor to the chicken kebabs and make them absolutely delicious!
Mayonnaise: We’ll be using mayonnaise as the creamy base to mix up all the ingredients for our delicious marinade.
Spices and seasonings: All you need are some simple spices and seasonings to take this dish to the next level. We’ll be using Mrs. Dash seasonings, a tablespoon of Vegeta to enhance flavor, black pepper, garlic salt, and about a teaspoon salt or to taste.
Lemon: Adding a little lemon juice is going to take your delicious Chicken Skewers to the next level. We’ll be using half a small lemon for the recipe.
Oil: You’ll need some oil for frying. I used olive oil for this recipe.
Progresso Italian Bread Crumbs: We’ll be using this to coat the chicken skewers to bread them perfectly. I use my own homemade Italian bread crumbs now and it takes these chicken skewers to the next level.
Bamboo Skewers: We’ll be using some bamboo skewers to thread the chicken onto while frying them.
How to Make Chicken Skewers (Step-by-Step)
Making these delicious Chicken Skewers is easier than you think. Here’s how to make it step by step:
Start by placing all the spices onto a plate and then mix them together. Set aside for now.
Next, place parmesan cheese into a food processor and crush it for 1 minute. Set aside as well for now.
Now trim off all the chicken fat from each chicken breast. Cut chicken breast into 1-inch cubes.
Wash the chicken really well and then place it into a strainer for the water to drain.
Next, in the bowl with the chicken add spices, crushed parmesan cheese, and mayonnaise. Mix well and let it stand in the fridge overnight or for at least 6 hours.
Remove from the fridge and squeeze half of the lemon into the chicken. Mix well.
Now thread each chicken piece onto a skewer. Dip the skewer with chicken into Italian Bread Crumbs.
Heat pan to medium heat and fry chicken skewer for 1 minute on each side total of 3 minutes.
Place cooked chicken onto a paper towel.
Your delicious Chicken Skewers are ready to be served.
How to Store Chicken Skewers
You can serve your chicken skewers right away or place chicken skewers onto a ceramic pan, and refrigerate until ready to heat again. In this way, they can be stored for up to 3 days in the fridge and reheated.
When ready to serve, preheat the oven to 350 F and heat it in the oven for 30 minutes.
You can technically freeze these Chicken Skewers for up to 3 months in the freezer, but it will alter the crispy texture of the breaded coating.

Hi Valya,
I made the skewers last night for Father's Day! I only had chicken thighs, didn't have vegeta.....and used sourcream in place of Greek yogurt........and still they turned out very yummy! Husband was impressed and our guests and children gave compliments also! I wanted to take picture but had to put everything on table so we could start eating. They quickly started disappearing.
This recipe is sure a keeper :-). I also made the purple cabbage salad with tomatoes and dill! Almost nothing was left of that as well!

Oh I DID love these chicken skewers! So did my picky eaters, who pinched the meat off the skewers and said "ooooh the inside is so pretty!"
I don't come from a family of cooks, there really wasn't anyone I could learn from. Then I got married, started having kids and developed a love for cooking and providing my family with wholesome meals.
