What is Mushroom Gravy?
Mushroom gravy is a savory sauce usually made with mushrooms, broth or bouillon, and seasonings. It's very delicious as a topping for mashed potatoes, but also goes great on steak and other beef, roast chicken, pork, and even vegetables!
Not only that, but the mushrooms in this recipe are a great low-calorie source of fiber, protein, and antioxidants. They help boost your immune system, aid in weight loss, lower your blood pressure, and more!
This mushroom gravy recipe can be made in various ways depending on the desired consistency and taste. Common ingredients used in mushroom gravies include butter, garlic, onions, mushrooms, herbs, and seasonings.
What Makes This Mushroom Gravy Recipe Special?
This mushroom gravy recipe is, seriously, one of the best ones you'll ever have. Here are a few of my top reasons why you'll love it:
Tasty: This mushroom gravy recipe is special because it takes the classic flavor of mushrooms and elevates it with a rich toasted flour base. The addition of a bouillon cube provides a deeper, richer flavor that pairs perfectly with the earthy notes from the mushrooms.
Easy: The ingredients in this recipe are simple and easy to find, making it an accessible dish for everyone. Nothing beats the taste of a homemade recipe, especially when it's so easy to make!
Healthy: Mushrooms are a great source of Vitamins D and B6 which support a healthy immune system. They've also been found to decrease the risk of cancer with their antioxidant content while lowering cholesterol and promoting the growth of healthy bacteria in your gut.
What You Need to Make Mushroom Gravy at Home
All you need are mushrooms and some other simple pantry staple ingredients to make this delicious mushroom gravy recipe! Let's take a closer look at each one:
- Flour: The first thing we'll need is some all-purpose flour to toast for the base of this gravy. This is what makes the base of the gravy itself.
- Mushrooms: It wouldn't be mushroom gravy without mushrooms! We'll need some whole or white button mushrooms for this recipe.
- Carrots: Next, we'll need a couple of whole carrots to help us enhance the flavor profile of this mushroom gravy recipe.
- Onion: We're also going to need a white onion for this gravy. Mildly spicy, sweet, and slightly pungent, onions have an awesome depth of flavor.
- Garlic: Garlic contributes a slightly nutty umami flavor to this mushroom gravy recipe.
Seasonings and Condiments for Gravy:
- Heavy cream: You'll need a little heavy whipping cream for this recipe. This is not just for its rich and fatty flavor but also to help make the gravy delightfully creamy.
- Chicken bouillon: For a little added flavor, we'll be using chicken bouillon as one of the two bouillons in this gravy.
- Vegeta: Next we're going to add some Vegeta, which is a seasoning mix made of dehydrated carrots, turmeric, garlic, and salt and it'll really help enhance the flavor of this gravy overall.
- Ketchup: With salty, sweet, sour, bitter, and umami flavors, ketchup has it all and really helps make this gravy something special.
- Mrs. Dash seasoning: We'll be using a little bit of this tasty bouillon to really bring out the mushroom flavor in this gravy.
- Black pepper: The nutty, slightly piney taste of black pepper pairs great with the rest of the flavors in this recipe. Go for freshly ground pepper if you can!
- Salt: Salt helps balance sweetness while suppressing some bitter flavors, and enhances the savory notes in this gravy.
How to Make Mushroom Gravy (Step-by-Step)
Making this delicious mushroom gravy is easier than you think. Here's what you need to do to make it at home step by step:
How to Prep Mushrooms and Veggies for Gravy
Wash and slice the mushrooms, then sauté them in 1 tablespoon of olive oil on high heat until the moisture evaporates in the large skillet. Once it does, remove the pan from the stovetop.
Now, peel and grate the carrots and onions and press the garlic. Add all three along with all the spices to the sautéed mushrooms and sauté for another 5 minutes.
Then add dry seasonings, heavy cream, and ketchup. Stir well and sauté for another 2 minutes or so. Set aside until ready for the next step.
How to Make Gravy
Add unsalted butter to the Dutch oven and as soon as the butter melts, add sifted flour and whisk until it mixes with the butter and absorbs completely. This should take about 10 seconds.
Add water and bring this mixture to a boil stirring constantly with a hand whisk to prevent the flour from settling to the bottom of the pot and then burning.
Next, transfer the sautéed vegetables and seasoning to the Dutch oven. Whisk it all together thoroughly then add in chicken bouillon paste.
Finally, add dry bay leaves and dill or parsley. Stir everything together and let it simmer for 10 minutes on low heat stirring every minute or so.
Remove from the stove and let the gravy rest for at least half an hour before serving.
Your delicious Mushroom Gravy is ready to be served. Pour it over your favorite dish and enjoy!
Tips for Making the Best Mushroom Gravy Ever
Use fresh mushrooms: Fresh mushrooms will add a delicious flavor and texture to the gravy that you won’t get with canned or frozen varieties.
Don't skimp on the seasoning: Make sure to use enough spices and bouillon cubes to really bring out the flavor in your gravy.
Use a whisk: A whisk is a great tool to use when making gravy, as it helps to evenly incorporate the ingredients and prevent lumps from forming.
Adjust the consistency: Add more or less water depending on how thick or thin you want your gravy to be.
Keep warm: Make sure to keep the gravy warm until it's served, as this will help keep it from getting too thick and clumpy.
Recipe Variation Ideas for Mushroom Gravy
This Mushroom Gravy recipe is absolutely perfect as is, but if you're looking to switch things up here are a few ideas you can try:
Spices: Switch up the spices and use a combination of cumin, coriander, paprika, or thyme for a unique twist on the classic recipe.
Roasted garlic: Add some roasted garlic for an intense garlic flavor.
Creamier: For a richer, creamier gravy, add a few tablespoons of cream cheese to the mix.
Other mushrooms: Mix and match the mushrooms to add variation to the flavor. Shiitakes, cremini, and porcini are all great options.
How to Store Leftover Mushroom Gravy
Storing leftover mushroom gravy is easy! Simply transfer the cooled gravy to an airtight container and refrigerate for up to 5 days.
To reheat, transfer the desired amount of gravy to a saucepan and add a few tablespoons of water. The gravy thickens as it gets cooler so it's necessary to add water to adjust it. Heat over medium-low heat, stirring often until it reaches your desired consistency.

Can I do it a day in advance? Thank you!
Valya's Taste of Home says
Yes, totally ok. Just reheat it before serving (you might want to add a little half & half to it to the dilute so it's not so thick).
Natalia says
This is a really tasty recipe, glad I saw it! A question, if I would add meat or chicken to make it more filling, at what point to do this?
Valya's Taste of Home says
Absolutely! Enjoy!

Aaah I wish I saw this recipe last week. We actually ran into some gravy problems during Thanksgiving, and this would have saved the day. We still ended up with gravy, but it wasn't as delicious as yours. I'm keeping this recipe for next year!
valya'stasteofhome.com says
I'm sorry to hear that. Next year you will not have that problem with my step by step recipe instructions. If you like mushrooms this is a perfect gravy for you! 🙂 Thank you Aida!

You know what's funny? I don't think I've ever made gravy. It's never been a favorite of mine, but my wife loves it! Good thing I saw this recipe...I might have to surprise her and whip up a quick batch this year. 🙂
valya'stasteofhome.com says
I grantee if you try my gravy with mashed potatoes especially, you will change your mind about not liking gravy. I don't like any gravy stores sell.
Sounds like a great idea to surprise her with a fresh batch of homemade gravy. Let me know what you think of it, if you ever make it. Thanks David 🙂
Michela @ From Italy With Food says
I love mushrooms too! I think I could add mushroom gravy to all dishes 😀 Yours looks so flavorful 🙂 What if I add tomato past instead of ketchup? Do you think it would be good anyway? Thanks!
valya'stasteofhome.com says
Tomato paste is very concentrated so use 1 tsp. Ketchup gives little sour taste to the gravy. Thank you Michela! 🙂
Thalia @ butter and brioche says

I like homemade mushroom gravy.. European think.. I guess. Very pretty site Valya!
valya'stasteofhome.com says
Thank you Ilona! What is your favorite European food and do make any?
Ilona's Passion says
Valya I cook a lot of Polish food at home.. pierogies, cabbage rolls, borscht, potato pancakes and many more:) I do not have my favorite.. I just love all polish food. I am from south of Poland and many dishes are very close to me, for example: potato/flour dumplings (not sure of the name in English) that I make very often and also dumplings made with potatoes and potato flour.. not sure of the name in English either... just dumplings I guess:) Do you know Bigos? It is cabbage and meat, sausage basically... we have similar language so maybe it is called the same....
valya'stasteofhome.com says
Oh wow! That is very cool! You know I recall being little girl, living in Ukraine still and my neighbors daughter came to visit her mom from Poland, and I heard how they were communicating. You are right! The language is very similar! The food is too!
No. I don't know what Bigos is. Maybe we call it differently. I can't think of the name. Thanks Ilona 🙂

Tanya says
Valya, Oh this looks yummy! I will sure be making it, however, what does ketchup add in the gravy? Thank you.
valya'stasteofhome.com says
It gives a little tomato flavor. You can add tomato sauce or not add any at all if you don't like it. Thanks Tanya! 🙂
