Key Ingredients
- All-purpose flour: We’ll need two types of flour for this recipe. The first is simple all-purpose flour to give your Peach Coffee Cake structure.
- Almond flour: This is the second type of flour we’ll be using to make our delicious coffee cake. Almond flour adds a beautiful flavor to the cake and has a mild sweetness to it. It also adds moisture to the cake since it has some fat content in it.
- Baking soda: We’ll be using two types of leavening agents as well. Using baking soda helps to leaven the cake since it has acidity in it in the form of peaches.
- Baking powder: This is the other leavening agent we’ll be using for a perfectly risen cake that’s light and delicious!
- Sea Salt: By adding a little salt to our cake, we’ll bring out all the flavors and make sure it balances everything out.
- Eggs: You’ll need some large eggs for this recipe at room temperature. Not only will eggs add flavor and moisture to your cake, but they will also create structure and stability in your batter.
- Sugar: We’ll be using some granulated sugar to sweeten the cake to the perfect level that goes beautifully with a cup of coffee.
- Vanilla extract: Adding vanilla extract helps balance out all the flavors and also enhances them at the same time. We’ll be using one teaspoon vanilla extract for this recipe.
- Almond extract: This is one of the secret ingredients for the most delicious cake ever! Almond extract has a beautiful, slightly nutty flavor that will help elevate your cake to the next level!
- Butter: Butter will add a beautiful moistness and tenderness to the cake. We’ll be using melted butter that has cooled down in terms of temperature.
- Fresh peaches: This is definitely the star ingredient of this delicious coffee cake recipe! We’ll be using tasty, fresh peaches for this recipe. The fresher and more delicious the peaches, the better the taste of the overall cake so make sure to use fresh, ripe ones for this recipe! You’ll need some for the cake itself, and sliced peaches to add on the top.

- Almond slivers: These not only add a delicious flavor to the cake, but also a beautiful texture that pairs perfectly with a cup of coffee.
- Confectioners’ sugar: We’ll be dusting the cake with some powdered sugar just before serving. You can also use a little cinnamon if you’d like, but just confectioners’ sugar goes perfectly with the flavor of the cake.

How to Make Peach Coffee Cake
This delicious cake is incredibly easy to make but will taste perfect every single time. Here’s what you need to do to make it:
How to Prep Peaches for Peach Coffee Cake
First things first, I like to start off by cleanly preparing the peaches.
Rinse and pat the peaches dry using a paper towel. Remove the skins from 2 peaches and dice them into small chunks about ½ of an inch in diameter.
For the remaining 2, slice peaches and place them in a dark place to prevent them from darkening but they’re ok to use even if they darken a little so don’t worry!

How to Make Batter for Peach Coffee Cake
Next, sift all-purpose and almond flour into a medium bowl and add the rest of the dry ingredients to it, i.e., baking powder, baking soda, and sea salt.
Stir everything together with a whisk until well combined and set aside until ready for use.

Next, preheat the oven to 350°F.
Now beat eggs and sugar on high until they turn foamy and pale in color. Then reduce mixing speed to low, add vanilla extract, almond extract, and cool melted unsalted butter.

Remove the bowl from the mixer stand. Scoop a couple of tablespoons of the flour mixture and add to the bowl of diced peaches. Coat peaches with flour and set aside.
Add the rest of the dry ingredients into the wet mixture in 3 additions with the help of a rubber spatula, gently folding in the flour without deflating too many air pockets in the batter. Then, gently fold in the flour-coated peaches.

How to Bake Peach Coffee Cake
Pour the batter into a 10-inch round prepared baking pan.
Lay out the sliced peaches in a circular design and sprinkle (raw) almonds.
Bake in the preheated oven at 350°F for 30 – 35 minutes or until an inserted toothpick comes out clean from the center of the cake.
Remove from the oven and allow the cake to cool in the pan for 15 minutes.

Remove from the baking pan and transfer onto a wire rack for the cake to cool down. Dust it with some confectioners’ sugar before serving. Alternatively, you can also drizzle some homemade glaze on it.
Your delicious Peach Coffee Cake is ready to be served with a delicious cup of coffee!

Recipe Tips
- Use Ripe, Juicy Peaches – They add natural sweetness and flavor.
- Don’t Overmix the Batter – Stir just until the ingredients are combined to keep the cake tender and soft.
- Pat Peaches Dry – Extra moisture can make the cake soggy, so blot sliced peaches with a paper towel before adding.
- Bake Until Just Done – Check a few minutes early; over baking will dry out the cake.
- Cool Before Slicing – Let the cake rest for at least 15 – 20 minutes so it sets and slices cleanly.
- Try a Lined Pan – Use parchment paper for easy removal and prettier slices.

Recipe Variations
- Berry Twist – Swap half of the peaches for blueberries, raspberries, or blackberries for a colorful summer blend.
- Peach & Cream Cheese – Add dollops of sweetened cream cheese to the batter before baking for a rich, tangy surprise.
- Nutty Crunch – Mix chopped pecans, walnuts, or almonds into the streusel topping for extra flavor and texture.
- Glazed Finish – Drizzle with a simple vanilla or cream cheese glaze once cooled for an added layer of sweetness.
- Spiced-Up – Add a pinch of nutmeg, cardamom, or ginger to the batter for a warm, cozy flavor.
- Coconut Peach Cake – Sprinkle shredded coconut over the crumble before baking for a tropical touch.
- Peach Upside-Down Coffee Cake – Arrange peach slices at the bottom of the pan with a brown sugar-butter mixture, then pour batter over for a stunning upside-down presentation.

How to Store Leftover Peach Coffee Cake
This cake is best served fresh but you can store any leftovers of this delicious peach coffee cake in the fridge for 3 to 4 days.
Just make sure to cool your cake completely before covering with plastic wrap and placing it in an airtight container. This will prevent it from sweating and getting soggy.
You can also store sliced peach coffee cake in the freezer for up to 2 months. Defrost the slices in the fridge overnight or leave them on the counter. I recommend slightly reheating it in the toaster oven before serving for a delicious cake that tastes like it was just out of the oven!
Frequently Asked Questions
Yes! Drain canned peaches well and pat them dry before adding. For frozen peaches, thaw completely and blot away excess moisture to prevent sogginess.
A quick 10 – 15 seconds in the microwave works well, or warm slices in a 300°F oven for 5 – 8 minutes.
Toss chopped peaches in a light coating of flour before folding them into the batter, that helps them stay evenly distributed.
Swap the all-purpose flour with a 1:1 gluten-free baking blend. Check the texture and add an extra tablespoon of liquid if the batter seems too thick.

Hi … I have a question: do you butter your pan or use parchment paper on the bottom ??
I butter the entire pan before transferring the batter. I do not place parchment paper. I hope this clarifies more.
