During cold and gloomy winter days, we need a little brightness on our table and in our day. How about this bright and colorful Pear Pomegranate Mandarin Winter Salad loaded with some late-season harvested fruit?
It offers not only a beautiful array of colors on your table but adds a variety of flavors and nutrition, which tends to decline during the winter season. It also happens to be very delicious!
The ingredients really mend together well. Bacon, feta cheese, and toasted almonds add so much scrumptious flavor to this salad. I tried this recipe not too long ago and it’s quickly become a popular pick for holiday menus.
Most of the fruit and vegetables can be prepped ahead of time, except for the pears (which should be cut immediately prior to serving, as they brown fast). Serve and enjoy with any main course.
Pear Pomegranate Mandarin Winter Salad Ingredients
- Toasted almond slivers (see how to toast almond slivers HERE)
- Pomegranate
- Pears
- Mandarins
- Feta cheese
- Organic Romaine Lettuce
- Organic Baby Spinach
- Ranch dressing (I used homemade ranch dressing)
Pear Pomegranate Mandarin Winter Salad Instructions
First things first, broil bacon (see this post how to broil bacon), and toast almonds. Set aside to cool until ready for use.
Rinse spinach, romaine lettuce and pat dry with a paper towel. Cut romaine lettuce and place into a large bowl along with spinach.
Add diced broiled bacon, toasted almonds, pomegranate seeds, mandarins, crumbled feta cheese, and chopped pear onto chopped romaine, lettuce, and spinach. Pour ranch dressing over the salad.
Next, pour ranch dressing over the salad.
Finally, gently mix the salad and dressing well and serve.

- 2 large – Pears
- 4 – Mandarins
- 2 oz. (55 g) – Feta cheese
- 1 bunch – Organic Romaine Lettuce
- 4 cups – Organic Baby Spinach
