With all the Christmas deserts and candies around during family gatherings, I usually find myself craving something little healthier. One thing that can be quickly and easily prepared in a pinch are these Tomato Appetizers. They are not only beautiful with a Christmas color theme, but so delicious. I love the hint of garlic in the mayo topping which goes nicely with fresh tomatoes. I like to use roma tomatoes on the vine, because they are smaller than regular size tomatoes and the closest tasting to homegrown. Also, if you're not planning to serve right away, use Best Foods mayonnaise brand, as it holds the drizzling shape longer. I love the taste of whipped mayo on these appetizers, but you have to serve it right away for the prettiest presentation. Otherwise tomato juice cause the mayo to water a bit and lose its shape. Sprinkle them with finely grated mozzarella cheese, so it can look snow. Decorate your table with these beautiful and healthy appetizers.
Ingredients you will need:
4 – roma tomatoes on the wine
1 large – Garlic clove (juice)
¼ cup – mayonnaise
Salt and pepper to taste
Chives for decorations
Insrtuctions
1. Wash tomatoes.
2. Slice tomatoes with a very sharp knife. Place them on the paper towel to juice out. Wash and press garlic. Place the pressed garlic into a cheese cloth and squeeze the juice out into a plate with mayo. Mix mayo and garlic juice together well, and then place it into the Ziploc bag.
3. Place tomatoes onto a platter. Cut off the edge of the Ziploc bag. Drizzle tomatoes with garlic mayonnaise. Sprinkle with salt and pepper to taste and then decorate with chives.
4. Serve right away.
