These Taco Bites Appetizers are fun, festive and adorable party food that will be gobbled up instantly at any party, get together or just for an after-school boost. They’ve got some big fans in the little ones! Kids do love this one bite cuteness more than adults seems like. Very delicate, gentle, and taste just like tacos.

This nicely doubles as great activity to involve the little helpers in, they had an absolute blast assembling these treats with mom. My little four-year-old gushed on and on about how she made “tacos” with mom. To work together with the littlest ones and create those hands-on memories of “cooking together” is precious. It also gives them a chance and a lot of fun practicing their creative skills.

These appetizers take some time to make because of all the little details but are absolutely worth every second spending that time with kiddos doing something practical in the kitchen. When taking time and energy making these little appetizers, I make extra taco meat to be used the next day is some other taco-type food, because it reheats well and tastes great until even the third day if refrigerated once cooled, and saves you lots of time for many yummy recipes like nacho salad, tacos, wraps, etc.

Ingredients:

Tostitos Corn Chips Scoops

1 – lbs. – Taco meat (I used half meat recipe as for Crunch Wraps)
½ cup – sour cream
2 cups – shredded iceberg lettuce
½ cup – shredded cheddar cheese
25 – mini cherry tomatoes

Instructions:

1. Use Crunch Wraps recipe post to make the meat. Shred cabbage, cheese, and slice tomatoes in half. Place sour cream into a sandwich bag, cut the corner off and set aside.

2. Place chips Scoop onto a large platter. Add ½ tsp. of taco meat into each scoop.

3. Pipe sour cream over the meat then place some shredded lettuce.

4. Finally, top it with a little bit of a shredded cheese and half of tomato.

  • Tostitos Corn Chips Scoops

    Looking amaizing. Thank you for idea. One question can you make them ahead of time or does the chip / shell get soft ?

      The chips get soft. But you can get all the ingredients ready and assemble them before serving. 🙂

      Yes, barely warm. Otherwise it softens the shell way too fast.
