– 1 gallon – whole milk room-emperature – ▢½ gallon – butter milk room-temperature – ▢1 tbsp. – vinegar

Step 1

Mix room-temperature milk, buttermilk, and vinegar in a large pot.

Step 2

Warm the mixture on low heat for 30 minutes, stirring occasionally.

Step 3

Let it sit on the countertop overnight.

Step 4

Heat the milk again as before, then let it stand for at least 10 hours.

Step 5

Line a colander with cheesecloth, strain the milk, and tie the cheesecloth.

Step 6

Place the cheese under a weight overnight, then remove from the cheesecloth and store.
