Homemade Buttermilk Muffins

Ingredients

– 5 large - eggs (room temperature) – ▢1 ½ cups - sugar – ▢2 cups - buttermilk (or kefir) – ▢1 tbsp. - baking soda – ▢1 tbsp. - vinegar – ▢2 sticks - butter (melted and cooled) – ▢4 cups - all-purpose flour – ▢2 cups - yellow raisins – ▢¼ cup -powdered sugar (for dusting the top of muffins)

Step 1

Melt 2 sticks of butter. Soak raisins in 2 cups of boiling water for 10 minutes, then drain.

Step 2

Preheat your oven to 375℉ (190℃). In a mixer, combine eggs and sugar. Mix on high for 10 minutes until airy.

Step 3

Reduce speed to low, add 2 cups of buttermilk, and mix for a couple of minutes. Add baking soda activated with vinegar and mix for an additional minute.

Step 4

Gradually mix in cooled melted butter, then add flour one cup at a time until fully incorporated. Stir in raisins.

Step 5

Grease muffin molds with 2 tablespoons of melted butter. Fill molds ¾ full with batter. Place molds on a pizza pan and bake for 35-40 minutes at 375℉. Let muffins cool for 5 minutes in molds, then remove and allow them to cool completely. Dust with powdered sugar before serving. Enjoy!
