Easy Broccoli and Cheddar Soup

This Broccoli and Cheddar Soup is incredibly easy to make and will be ready in under 30 minutes! It's creamy, hearty, and the perfect comfort food!

Ingredients

– 2 tbsp butter – 1 small onion, chopped – 1 celery rib, chopped – 1 large garlic clove, minced – 2 cups fresh broccoli florets, chopped – 2 cups chicken broth – 1 cup heavy cream – 2 cups shredded cheddar cheese – Salt and pepper to taste

Step 1

In a large pot, melt butter over medium heat. Add onion, celery, and garlic, and cook until tender, about 5-7 minutes.

Step 2

Add broccoli and chicken broth to the pot, bring to a boil, then reduce heat and simmer for 10-15 minutes, or until the broccoli is tender.

Step 3

Remove the pot from the heat and use an immersion blender to puree the soup until smooth. If you don't have an immersion blender, you can use a regular blender, but be sure to blend the soup in batches and vent the lid to avoid steam buildup.

Step 4

Once the soup is smooth, return the pot to low heat and stir in the heavy cream and cheddar cheese until the cheese is melted and the soup is heated through.

Step 5

Season with salt and pepper to taste. Serve hot, garnished with additional shredded cheddar cheese or croutons, if desired.
