Want your kids to eat more veggies? If they don't like vegetables, they will! Create a fun environment for the kiddos in the kitchen. Help them with preparing vegetables and the cream if they need assistance, and have them assemble this cute appetizer themselves. One tiny rule....
what you make is what you must eat. Vegetables will taste really good to them on this beautiful creation they've accomplished. I got this idea a while back from one of the magazines while waiting in check-out at a grocery store. I don't remember which one though, to give credit to. We've been making this Under the Sea Appetizers for Kids with kids and they absolutely love making and eating them as well.
Not all kids like the taste of garlic in the cream I've noticed, so you can make it with and without. You can use different varieties of vegetables like cucumbers, cauliflower, different colors of pepper, salary, etc. Or have them create their own combo. So if you want to do something fun and exciting with your kiddos this Labor Day weekend, give this creation a try. 🙂
Ingredients you will need:
¼ bunch – broccoli
½ red – bell pepper
1 cup – colorful gold fishes
¼ bunch – green onions
8 oz. – cream cheese
6 – English muffins
1 small – garlic clove
Sky blue Wilton food coloring
Instructions:
1. Wash and cut vegetables to small pieces. Pat dry them with paper towel, and set aside.
2. Prepare the cream cheese. Squeeze garlic into a cubed softened cream cheese, and beat it on high with hand mixer unit well combined. Add little food coloring and then beat it again for a minute. Scrape the sides of the bowl and then beat it again for a minute. Set aside.
3. Slice English muffins in half horizontally; this will make 12 half’s. Spread 2-3 table spoons full of the cream onto each muffin. Spread it evenly, and make a water wave design.
4. Insert vegetables – green onions, slice of pepper, broccoli, and place different colors of gold fishes.
5. Enjoy right after assembling.
