Chives, Radish, and Cucumber Salad Recipe requires very few ingredients but is so crisp and full of flavor, especially when using garden fresh produce. I can just eat this salad by itself, but I usually serve it with mashed potatoes or buckwheat.
Chives Radish and Cucumber Salad Recipe, fresh vegetabes, Greek yogurt dressing, spring veggie salad
bunches – green onion
bunches – radishes
long – English cucumber
(or 5 pickling cucumbers)
– Organic Greek yogurt
(or sour cream)
– salt and pepper to taste
Rinse, and cut all the vegetables: English cucumber (or 5 pickling cucumbers), green onions, radishes, and dill.
Place all chopped veggies into a large bowl, and add Greek yogurt (or sour cream), salt and pepper to taste.
Mix the salad well.
Add dressing (Greek yogurt or sour cream), and seasoning right before serving otherwise it will water, and the salad will turn soggy. You can cut all the vegetables ahead of time even the night before. Just cover with plastic wrap or lid and keep it in the fridge until ready to serve.
