How can you not include this classic treat? As you can imagine, there must be thousands of recipes out there. This one, in my opinion, is the best and the only recipe you'll need. It’s a fairly simple recipe to make but tastes absolutely incredible. The homemade pie crust has only four ingredients, including one as basic as water. The filling is very simple as well. It consists of brown and regular sugar, cinnamon, nutmeg spices, flour, and salt. That's it!

  • Pie Crust Instructions:
  • 2 - cups 256 g - organic all-purpose flour + ½ cup (60 g) for dusting
  • 1 tsp. - sea salt
  • 10 oz. 283 g - cold unsalted butter
  • ½ cup 118 ml - cold water
  • Apple Pie Filling Ingredients:
  • 7 large 3 lbs. or 1.4 kg - Granny Smith apples
  • ½ cup 100 g - organic sugar
  • 1/3 cup 65 g - cane brown sugar
  • ¼ cup 30 g - organic all-purpose flour
  • ½ tbsp. - ground cinnamon
  • ¼ tsp. - ground nutmeg
  • 3 tbsp. 42 g - unsalted butter + 1 tbsp. (14) for greasing the pie dish
  1. Pie Crust Instructions:
  2. In a large glass bowl combine sifted flour and salt. Add cold cubed butter. Using a pastry cutter, cut butter and combine with flour until mixture resembled a coarse pea-sized meal.
  3. Drizzle cold water over the pie crumbs while mixing the crumbs with your hand. Slowly drizzle in the cold water while stirring the mixture around with your hand or a spatula. Form the dough into a ball (do not knee the dough).
  4. Dust a bowl with a tablespoon of flour and roll the dough into a ball. Then split the ball into 2 even pieces, flatten each piece into disks.
  5. Wrap each dough disk with a plastic food wrap. Refrigerate for an hour or so. (NOTE: I have refrigerated the dough overnight. Also, you can freeze the disks and then place it into the fridge and let it thaw overnight)
  6. Apple Pie Filling Instructions:
  7. In about 45 minutes prepare the apple filling. Combine all dry filling ingredients cane brown and regular organic sugars, flour, cinnamon and nutmeg spices and sea salt. Stir with a hand whisker to combine.
  8. Rinse, peel and slice apples. Place them in a medium glass bowl. Sprinkle the dry filling mixture over apples and toss and mix to coat all the apple slices with the filling mixture.
  9. Assembling the Pie Instructions:
  10. Grease the pie dish (it's optional, but preferred to prevent from the crust sticking to the dish). Take one dough disk out of the fridge. Dust working surface with a flour. Roll the disk about 12 inches in diameter.
  11. Place pie crust over the pie dish and cut the edge off evenly with a pizza cutter.
  12. Lay the apple slices compactly as possible into the pie dish (I don’t just pour the apple slices into the crust, I tuck them in tightly so there is barely any air pockets). Dust the working surface again and roll out the second disk about 1/8 of an inch thick. Cut out leaves and place them on the edge of the pie.
  13. Place 3 tbsp. of sliced into thin pieced butter over the top of apples. Cover the pie with aluminum foil and bake for 1 hour covered then remove the foil and bake additional 15 min uncovered.
  14. While the pie is baking you can work on the leave topping. Cut out the leaves and place them on a large 16 X 22 baking sheet lined with parchment paper. Bake the leaves at 400 F (204 C) for 20 min. Remove from the oven and slide the parchment paper with baked leaves onto countertop (if you leave them on the baking sheet they will continue to bake and will turn out very dark).
  15. Remove the pie from the oven and let it cool to warm temperature before topping with baked pie leaves.
  16. Slice the pie cooled.
  17. Top the pie topped with cream or French vanilla ice cream and enjoy!
