Ingredients

Batter Ingredients – ▢1 cup - whole organic milk – ▢¾ cup - organic sugar – ▢1 tbsp. - active dry yeast – ▢5 large - eggs (I used home-raised chicken eggs) – ▢4 oz. - unsalted organic butter – ▢1 tsp. - pure vanilla extract – ▢½ tsp. - sea salt – ▢5 ½ cups - organic all-purpose flour Buns Farmers Cheese Filling Ingredients – ▢1 ½ lbs. - Farmers cheese – ▢8 oz. - organic cream cheese – ▢½ cup - sugar (I used organic sugar) – ▢1 tsp. - pure vanilla extract – ▢¼ tsp. - sea salt – ▢1 large - egg (I used home-raised chicken eggs) – ▢1 – 2 cups - organic raisins (depends how much you like it) Buns Egg Wash Ingredients – ▢1 large - egg – ▢2 tbsp. - water

Step 1

Warm the milk, add ¼ cup sugar and yeast. Stir and set it aside in a warm place.

Step 2

Melt butter and let it cool.

Step 3

In a stand mixer, beat eggs and ¾ cup sugar until fluffy and pale.

Step 4

Reduce speed and add salt, vanilla extract, melted butter, and yeast mixture.

Step 5

Switch to a dough hook and add flour one cup at a time until the dough is smooth (about 10 mins).

Step 6

Allow the dough to proof for a couple of hours in a warm place.

Step 7

Mix farmer's cheese, cream cheese, sugar, vanilla extract, salt, and an egg. Add soaked and drained raisins.

Step 8

Roll out dough, cut circles, place on a baking sheet, create cavities, brush with egg wash, fill with cheese mixture, and bake at 350F (180C) for 20-25 minutes until golden brown.
