The Perfect Hedgehog Cookies Ezhiki

Ingredients

For the Dough: egg yolks sour cream butter baking soda vinegar all-purpose flour For the Filling: I like to use home frozen cherries. You may use anything you like; chocolate chips, raisins, cranberries, blueberries, frozen or dried fruit, etc. For the Chocolate Dipping: I use the chocolate ganache recipe For the Wafer Coating: colorful circular wafers (available at any European Stores) strawberry flavored wafers vanilla flavored wafers lemon or orange flavored wafers 4 - gallon size – Ziploc bags

Step 1

Preheat the oven to 350°F. In a medium bowl, beat together the softened butter and sugar until creamy.

Step 2

Add the egg and vanilla extract to the bowl, and beat until well combined. In a separate bowl, sift together the flour, cocoa powder, baking powder, and salt.

Gradually mix the dry ingredients into the butter mixture, stirring until just combined. Roll the dough into small balls, about 1 inch in diameter.

Place the balls on a baking sheet lined with parchment paper, and use a fork to gently press down on each ball to flatten it slightly.

Bake for 10-12 minutes, or until the cookies are set and slightly firm to the touch.

Remove the cookies from the oven, and let them cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely.

Step 7

Melt the chocolate chips in the microwave or on a double boiler. Dip each cookie into the melted chocolate, and use a toothpick to create spikes on the top to resemble a hedgehog.

Step 8

Place the cookies in the refrigerator for a few minutes to allow the chocolate to harden. Serve and enjoy!
