Ingredients

Cake Mixture Ingredients AD – ▢Leftover cake sponge scraps (see a raspberry mini cake recipe post) – ▢Leftover raspberry frosting(see a raspberry mini cake recipe post) Chocolate dipping Ingredients – ▢I used my chocolate ganache recipe Cakesicles Topping Ingredients – ▢Crushed dried-freeze raspberries

Step 1

Place the leftover cake sponge and cake filling or frosting into the mixing bowl of an electric mixer. Mix on low speed until smooth and well incorporated.

Step 2

Fill popsicle molds with the cake mixture and insert popsicle sticks. Freeze for about an hour. Gently remove the cakesicles from the molds and place them on a platter.

Step 3

Thaw the cakesicles in the fridge before dipping them in chocolate ganache to prevent cracking.

Step 4

Dip the cakesicles into melted chocolate ganache, scraping off any excess with a spatula.

Step 5

Dust the cakesicles with freeze-dried raspberries and place them on parchment or wax paper to set. For quicker setting, refrigerate for about 15 minutes.
