Ingredients
Make the cake batter: In a stand mixer, whisk the eggs and sugar until fluffy and pale. Gradually add the flour mixture in three additions, folding carefully with a hand whisk or spatula. Divide the batter into two prepared cake pans.
Bake and cool the cakes: Bake in a preheated 350°F (325°F for convection) oven until a toothpick inserted in the middle comes out clean. Allow the cakes to cool in the pans for 5 to 10 minutes, then transfer them to a cooling rack. Let them cool completely before using.
