Super Easy  Potato Rolls

These potato rolls are made using mashed potatoes which makes them stay soft and fresh for longer! Plus, the flavor is delicious and they're super versatile!

Ingredients

– ½ cup – water – ▢¾ cup – milk – ▢2 tbsp. – organic sugar – ▢2 tsp. – yeast – ▢1 large – egg – ▢½ tsp. – sea salt – ▢4 oz – unsalted butter melted – ▢1 cup packed – mashed potato – ▢5 cups – organic all-purpose flour – ▢Olive oil for greasing pan and brushing the rolls – ▢Sea salt or garlic powder – ▢Fresh parsley

Step 1

Preheat the oven to 375°F (190°C). In a large mixing bowl, combine mashed potatoes, melted butter, sugar, salt, egg, and yeast mixture. Mix well.

Step 2

Add flour to the mixture gradually, stirring until the dough is no longer sticky. Knead the dough on a floured surface for about 5-8 minutes.

Step 3

Grease a large bowl with oil and place the dough in the bowl, turning once to coat the dough with oil. Cover the bowl with a damp towel and let it rise in a warm place for 1 hour or until it doubles in size.

Step 4

Punch down the dough and shape into dinner rolls. Place the rolls in a greased baking dish, cover with a damp towel, and let rise again for about 30 minutes.

Step 5

Brush the rolls with melted butter and bake in the preheated oven for 20-25 minutes or until golden brown. Remove from oven and brush again with melted butter. Let cool for a few minutes before serving.
