Ingredients

Zuppa Toscana Soup Ingredients – ▢½ lbs. – ground beef (see How to Grind Meat at Home) – ▢sausage seasoning (I use ½ amount seasoning as for Stuffed Shells recipe) – ▢1.5 lbs. – potatoes – ▢1 bunch – kale – ▢6 oz. – bacon (see How to Make the Perfect Broiled Bacon post) – ▢½ small – onion – ▢5 - garlic cloves – ▢16 cups – water – ▢1 tbsp. – salt – ▢2 tbsp. – organic Chicken Better Than Bouillon Paste – ▢1 cup – heavy whipping cream

Step 1

Prepare the meat ingredients by seasoning ground beef with sausage seasoning.

Step 2

Broil the bacon until crispy. Place it on a paper towel-lined cutting board to remove excess grease and let it cool before cutting.

Step 3

Peel and rinse the potatoes. Dice or slice them according to your preference. Rinse the potatoes again to remove starch. Submerge them in clean water and let them sit on the counter.

Step 4

Rinse the kale and tear small pieces off the stem. Place them in a bowl or chop them on a cutting board. Drain and set aside the prepped kale.

Step 5

Brown the seasoned ground beef on high heat. Set it aside.

Step 6

Chop the onion and sauté it on high heat for a few minutes. Add garlic and sauté for 5 more minutes on low heat. Set it aside.

Step 7

Bring 16 cups of water to a boil in a large pot. Drain the sliced potatoes and add them to the boiling water with a tablespoon of salt. Reduce the heat to medium.

Step 8

Remove accumulated starch from the water and continue boiling until the potatoes are fork-tender.

Step 9

Add sausage, bacon, chicken bouillon paste, sautéed onion with garlic, and heavy cream to the pot. Let it simmer for a few more minutes.

Step 10

Add and mix in the kale leaves. Simmer the soup for about 15 minutes until the kale softens.

Step 11

The soup is now ready to be enjoyed! Serve it warm, and you can top it with grated Parmesan cheese or Romano cheese.
