Ingredients

– ½ cup – unsweetened coconut flakes – ▢20 – organic Medjool dates pitted – ▢½ cup – almond flour – ▢1 cup – salted almonds – ▢1.3 oz – freeze-dried raspberries (or any other freeze-dried fruit – ▢1 tsp. – pure vanilla extract – ▢1 tbsp. – coconut oil melted

Step 1

Toast coconut flakes until golden. Pit dates, melt coconut oil, and gather dry ingredients.

Step 2

In a food processor, combine dates, toasted coconut, almond flour, salted almonds, and freeze-dried raspberries. Process, then add vanilla extract and melted coconut oil. Blend until well combined.

Step 3

Scoop coconut mixture, roll into bite-sized balls. Chill in the fridge for an hour. Serve and enjoy your Coconut Bites!
