Ingredients

Farmers Cheese Cheesecake Crumbs Ingredients – ▢2 cups - crushed Biscoff cookies or Honey Graham Crackers Farmers Cheese Cheesecake Filling Ingredients – ▢14 oz. – Homemade farmer's cheese – ▢½ cup – sour cream – ▢½ cup – granulated sugar – ▢1½ cup – heavy whipping cream – ▢1 lb. - strawberries (you may use fruit topping of our choice) – ▢6 - parfait cups or water glasses

Step 1

Prepare the crust: If using graham crackers, place them in a food processor and pulse for 1 minute. Add 1 tablespoon of sugar and 2 tablespoons of unsalted butter, then pulse for another minute until well blended. Skip this step if using Biscoff cookies since they are already buttery and sweet. Set the crumbs aside.

Step 2

Prepare the strawberries: Rinse and pat the strawberries dry with a paper towel. Cut them into small cube-like pieces and set aside.

Step 3

Make the cheesecake mixture: In a large bowl, whisk together farmer's cheese, sour cream, sugar (or powder sugar), and a pinch of sea salt using a hand mixer until well combined. In a separate mixer bowl, beat heavy cream on high for 2 minutes or until thick (do not overbeat). Gently fold the farmer's cheese mixture into the whipped heavy cream using a spatula.

Step 4

Assemble the cheesecake: Start by placing 3 tablespoons of toasted graham cracker crumbs at the bottom of each dessert cup. Next, pipe the cheese mixture to cover the crumbs, and then top it with the diced strawberries. Optionally, you can add kiwi for additional taste and color. Repeat the same steps to create a second layer.

Step 5

Garnish and serve: Finally, garnish each dessert cup with mint leaves. Your delicious cheesecake is now ready to be served and enjoyed!
