Easy Instant Pot Barbeque Chicken

Ingredients

Seasoning Ingredients – ▢2 tbsp. – smoked paprika – ▢1 tbsp. – garlic salt – ▢1 tsp. – salt – ▢1 tsp. – Mrs. Dash seasoning – ▢½ tsp. – black ground pepper – ▢½ tsp. – cumin – ▢½ cup – cold water – ▢1 cup – BBQ sauce + 1 cup after sautéing – ▢4 – bread buns BBQ Chicken Sandwich Topping Ingredients – ▢4 – organic leaf lettuce – ▢4 slices - American cheese – ▢1 medium – organic avocado – ▢2 – cucumbers (I used homegrown cucumbers)

Step 1

Measure and mix together all the seasoning ingredients in a bowl, then set aside.

Step 2

Trim the fat from boneless chicken breasts and rinse them. Place the chicken in a glass bowl, sprinkle with the prepared seasoning, and add 1 cup of BBQ sauce. Mix to combine.

Step 3

Add ½ cup of water (or chicken broth) to the instant pot. Place the coated and seasoned chicken in the pot.

Step 4

Close the instant pot with the lid, turn the valve to the sealing position, and press the Poultry button. Adjust it to high pressure and set the timer to 20 minutes. The instant pot will automatically start heating.

Step 5

After the cooking time is done, carefully turn the valve to the venting position to release the steam. Once the steam is fully released, drain any excess liquid from the pot.

Step 6

Press the "Sauté" mode and set the timer to 20 minutes. Remove one cooked chicken breast at a time, shred the meat with forks, and return it to the pot. Repeat with all the chicken breasts. Stir every 5 minutes to prevent burning.

Step 7

After 15 minutes of sautéing, add another cup of BBQ sauce and let it sauté for an additional 5 minutes. The instant pot will switch to "Keep Warm" mode.
