Ingredients

– 8 large – Russet potatoes – ▢1 extra small – onion – ▢3 large – garlic gloves – ▢1 large – egg – ▢¼ cup – organic all-purpose flour – ▢Salt and pepper to taste – ▢Olive oil for sautéing

Step 1

Peel and rinse the potatoes, onion, and garlic. Grate half of the potatoes using a box grater, ensuring a coarser texture. Grate the onion and garlic on the same grater. Continue grating the remaining potatoes on a star-shaped grater, mixing them with the onion juice. Drain the grated vegetables in a strainer, reserving the potato juice.

Step 2

In a mixing bowl, combine the grated vegetables with an egg, flour, salt, and pepper. Add 1/4 cup of the reserved potato juice to adjust the mixture's thickness. Heat a skillet over medium heat and add 1 tablespoon of oil. Spoon heaping tablespoons of the potato mixture onto the skillet, flattening them into pancakes. Sauté for about 2-3 minutes per side until they're dark golden brown. Repeat with the remaining mixture, adding more oil as needed.

Step 3

Drain the potato pancakes on paper towels to remove excess oil. Serve immediately with a dollop of sour cream. Enjoy your potato pancakes!
