Authentic Ukrainian Sirniki

Sirniki are delicious slightly sweet cheese pancakes popular in Ukrainian and most East European households that are golden crispy on the outside and perfectly fluffy on the inside.

Ingredients

– 5 – eggs – ▢¾ - 1 cup – sugar – ▢24 oz. – cottage cheese – ▢1 tsp – baking soda – ▢1 tbsp – vinegar – ▢¼ tsp - salt – ▢4 - 5 cups – all-purpose flour – ▢Olive oil for sautéing

Step 1

In a mixing bowl, combine the cottage cheese and eggs. Whisk until well combined.

Step 2

Add the all-purpose flour, sugar, baking powder, salt, and vanilla extract to the mixing bowl. Whisk until a smooth batter forms.

Step 3

Heat a non-stick skillet over medium heat and add a tablespoon of butter to the skillet.

Step 4

Spoon about 1/4 cup of batter for each pancake into the skillet. Cook until the edges start to dry and bubbles form on the surface, about 2-3 minutes.

Step 5

Flip the pancakes over and cook until golden brown on the other side, about 2-3 minutes. Repeat the process with the remaining batter, adding more butter to the skillet as needed.

Step 6

Serve the pancakes warm with your favorite toppings, such as fresh fruit, syrup, or whipped cream.
