Ingredients

For the Sharlotka Cake Batter – ▢6 large – eggs – ▢1 cup – sugar – ▢1 tsp. – baking soda – ▢1 tsp. – baking powder – ▢¼ tsp. – sea salt – ▢1 ¾ cups – all-purpose flour – ▢4 small – Granny Smith apples For the Sharlotka Cake Topping – ▢3 tbsp. – all-purpose flour – ▢2 tbsp. – sugar – ▢1 tbsp. – ground cinnamon – ▢2 tbsp. – unsalted butter – ▢Caramel Sauce for drizzling (optional)

Step 1

Sift together flour, baking soda, baking powder, and salt into a medium bowl. Whisk to combine, then set aside.

Step 2

In a small bowl, sift 3 tablespoons of flour. Add softened butter, cinnamon, and sugar. Mash and mix with a fork until crumbly. Set aside.

Step 3

Wash, peel, and slice apples using an apple slicer. Further cut slices into smaller pieces. Coat apples with a few tablespoons of flour and refrigerate.

Step 4

Preheat the oven to 325°F. Beat eggs and sugar together for 10 minutes until ribbon forms. Gradually add the flour mixture, stirring with a spatula. Fold in chilled chopped apples.

Step 5

Grease a 9” baking dish or use parchment paper. Pour the batter into the prepared pan. Bake for 45 minutes at 325°F. Cool in the pan, then transfer to a platter. Drizzle with caramel sauce before serving.
