For Almond Coffee Cake Batter – ▢2 cups – all-purpose flour – ▢½ cup – almond flour – ▢½ tsp. – baking soda – ▢1 tsp. – baking powder – ▢¼ tsp. – sea salt – ▢6 – large eggs – ▢1 cup – sugar – ▢½ cup – melted unsalted butter – ▢1 tsp. – pure vanilla extract – ▢1 tsp. – almond extract – ▢3 large – pears For Almond Coffee Cake Topping – ▢1 – pear – ▢¼ cup – almond slivers – ▢2 tbsp. – powder sugar

Step 1

Measure and sift together all-purpose flour, almond flour, baking soda, baking powder, and a pinch of sea salt. Whisk the dry ingredients until fully combined.

Step 2

Rinse and dry four pears. Cube three pears into quarter-inch pieces and coat them with a bit of the dry flour mixture. Slice the remaining pear for topping.

Step 3

In a large bowl, beat eggs and sugar until pale yellow. Add vanilla and almond extract, mixing well.

Step 4

Gently fold the dry ingredients into the wet mixture. Pour the batter into a greased 9-inch springform cake pan.
