How to Make Almond Coffee Cake Batter
Start by carefully measuring all the dry components. This includes all-purpose flour, almond flour, baking soda, baking powder, and a pinch of sea salt. To ensure a smooth and lump-free cake batter, sift all these ingredients through a strainer.
Once sifted, blend them together using a hand whisk until they are fully incorporated. Set this flour mixture aside for a while.
The next step involves preparing the pears. Rinely rinse four pears and pat them dry using a paper towel. Cube three of these pears into small, quarter-inch pieces. These cubes will be mixed into the cake batter later, providing bursts of fresh flavor.
Slice the remaining pear and set it aside. These slices will be placed on top of the cake for presentation and an added layer of taste.
Now, it’s time to get the oven preheating. Set your oven to 350 ℉ to ensure it’s at the right temperature when the cake is ready to be baked.
How to Incorporate Wet Ingredients
While the oven is preheating, start with the wet ingredients. In a large bowl, beat together the eggs and sugar using an electric mixer on high speed until the mixture turns pale yellow in color. This process will incorporate air, making your cake lighter and fluffier.
Once you achieve the desired color, turn down the mixing speed and add in the melted butter, vanilla, and almond extract. These will infuse the cake with a lovely, sweet aroma.
Before you mix the diced pears into the cake batter, take a couple of tablespoons from your earlier prepared flour mixture and coat the diced pears. This small step helps to prevent the fruit from sinking to the bottom of the cake during baking and to take out extra moisture.
