Ingredients
For Scrambled Eggs
6large eggs
½cupheavy cream (half &half or whole milk)
¼tsp.sea salt (or to taste)
⅛black ground pepper (or to taste)
2tbsp.olive oil (avocado or coconut oil)
Instructions
Crack the eggs into a medium mixing bowl and pour in the cream. Season with a pinch of salt and pepper, but don’t whisk yet.
Place a nonstick skillet over medium-high heat, add a dash of oil, and let it warm
Whisk the eggs and cream until frothy and fully blended, with no streaks of yolk or white remaining.
Swirl the oil to coat the skillet, then pour in the whisked eggs. Let them cook undisturbed for about 20 seconds, until the edges just begin to set.
Using a rubber or silicone spatula, gently push the eggs from the edges toward the center and back, folding them slowly rather than stirring vigorously.
After 15 - 20 seconds, when the top starts to set, gently flip larger pieces over like pancakes. For well-cooked eggs with a golden sear, flipping is important; for softer, creamier eggs, you can skip this step. Cook for another 15 seconds if flipped.
Transfer to a plate and sprinkle with chopped chives for extra flavor. Your perfectly creamy scrambled eggs are ready to enjoy!
