Ingredients
For the Greek Yogurt Pancakes
2cupsorganic all-purpose flour
2tsp.baking powder
1tsp.baking soda
¼tsp.sea salt
1 ½cupswhey (or 2 cups of Kefir)
1egg
1tsp.pure vanilla extract
1tbsp.unsalted butter (melted)
1tbsp.raw honey
¼cupGreek yogurt

Instructions
Prepare the Pancake Batter
Mix the dry ingredients: In a bowl, combine the all-purpose flour, baking powder, baking soda, and salt. Set this mixture aside.
Prepare the wet ingredients: In another bowl, beat the whey and egg together well using a hand whisk. Then add the remaining wet ingredients: vanilla, melted butter, honey, and Greek yogurt. Whisk this mixture again with a hand whisk for about a minute or until everything is well combined.
Combine the wet and dry ingredients: Add the wet ingredients to the dry ingredients and mix everything together well until you have a smooth pancake batter.
Cook the Pancakes
Heat the skillet: Heat a skillet over medium heat, then add ¼ tbsp. of butter.
Pour the pancake batter: Use a pancake dispenser or a ladle to pour the pancake mix into the heated and buttered pan. Cook the pancakes for about 1 to 1 ½ minutes on each side or until they are golden brown.
Serve the pancakes: Serve the pancakes warm with your favorite fruit, organic maple syrup, or homemade strawberry syrup and cream.
