Ingredients
For Marinated Mushrooms
4lbs.– fresh mushroom (of your choice)
2cups– water
½cup– white vinegar
½cup– Olive oil
1tbsp.– sea salt
¼cup– sugar
4bay – leaves
1tsp.– peppercorns
½tsp. - crushed red pepper
2garlic - cloves
1– 2 tbsps. – freshly chopped dill
Instructions
Preparing the Mushrooms
Let's start by preparing the mushrooms. First, give your mushrooms a good rinse under running water to remove any dirt clinging to them.
You can use any type of mushrooms you prefer for this recipe - button mushrooms, baby bellas, cremini mushrooms, or even portobello mushrooms.
Once they're clean, place them into a bowl with a lid and set aside for now.
Preparing the Marinade
Next, you'll need to prepare the marinade.
In a small saucepan, combine all the rest of your ingredients except for the garlic and freshly chopped dill. This includes olive oil, vinegar, garlic, salt (preferably kosher salt for its coarse texture and pure flavor), and any other flavors you'd like to add, such as oregano, bay leaf, or fresh thyme.
Heat the mixture over medium heat, stirring constantly until the salt dissolves completely. This should only take a few minutes.
Marinating the Mushrooms
As soon as your marinade comes to a boil, carefully pour the hot mixture over the prepared mushrooms in a bowl. Allow the mushrooms to marinate on your countertop, covered with the bowl's lid until the marinade has cooled completely.
This process allows the mushrooms to absorb all the delicious flavors from the marinade while also making sure that they stay fresh and safe to eat.
Once the marinade has cooled, mix in freshly chopped dill. These ingredients add a burst of fresh flavor that compliments the tangy marinade perfectly.
Feel free to adjust the seasoning at this point, adding additional salt and pepper to taste if desired.
Cover the bowl again with the lid and let the mushrooms continue marinating in the refrigerator for an additional twelve hours. This extended marinating time allows the flavors to penetrate deeply into the mushrooms, making them incredibly tasty.
