Instructions
Peel, rinse, and finely grate carrots. (If you don't have a grater, you may get one here.)
Place grated carrots into a small bowl. Add finely shredded cheese. Then add mayonnaise. Press garlic. Mix all together until well combined. Add salt and pepper to taste and mix it again
Slice the baguette and lay the slices out on a platter. Spread one heaping tablespoon of carrot and cheese mix on each slice.
Garnish with dill (optional but adds a marvelous taste and aroma), chill for a few hours before serving (if preferred raw), or toast them in a toaster oven for 5 minutes at 350 ℉.
Notes
When grating the carrots and cheese, make sure they are finely grated. This will help the ingredients blend well and also make the canapés easier to eat.
Press the garlic clove instead of mincing it. This will release more flavor and give the canapés a subtle garlic
Use mayonnaise that is at room temperature. This will make it easier to mix with the other ingredients and ensure a smoother consistency.
Don't forget to season your carrot and cheese mix with salt and pepper. This simple step can make a big difference in bringing out the flavors of the other ingredients.
Garnishing with dill is not only for presentation. It also adds a fresh, herby note that complements the sweetness of the carrots and the richness of the cheese.
